Often times in vegan baking they will use applesauce instead of an egg a quarter cup of applesauce equals one medium sized egg. Mixing flax seeds in water will make a vegan egg as well. I believe it's 1-2 tbsp of flaxseed in a quarter cup of water. And thanks to the lemon juice it kind of makes sense why it would taste just like apple pie. Try to make Ritz crackers at home using the applesauce cake instead of eggs.

Add bell pepper, celery & pimento with nuts. mix. Add cool whip mix all ingredients and pour in 9x12 glass casserole dish sprinkle with cheese Refrigerate. for 4 hours
