Easy VEGAN FRUIT CAVIAR | experimenting with molecular cuisine

  • Today I will show you how to make your own homemade vegan caviar, it is extremely beautiful on any dishes, you can make it sweet or savoury, it is entirely up to you.

    Ingredients:
    ►vegetable oil
    ►baking syringe
    ►agar agar
    ►50+50 g sugar
    ►2+2g agar agar
    ►150ml orange juice
    ►150ml brewed coffee
    ►200 ml chilled vegetable oil
    🔪 Utensils and equipment
    ►1 medium pan
    ►squeeze bottle
    👩🏻‍🍳 Preparation
    1. Put the vegetable oil in the freezer
    2. Prepare the orange juice
    3. Bring to a boil in separate bowls the orange juice and the coffee, add in each batch 50g of sugar and stir to dissolve the sugar
    4. Add the agar agar in the mixtures and simmer for about 30 seconds, ensure there are no formed lumps
    5. Cool down the mixture for about 15 minutes
    6. Transfer into the squeeze bottle and carefully drip the sauce into the cold oil.
    7. Use a slotted spoon to separate the caviar from the oil.
    8. Rinse in a bowl of luke warm water.
    7. Enjoy!

    Absolutely love it Natasha! Very innovative. Great to presnt vegan food and make it more interesting and flavoursome. How long do they last once you've made a jar? I'm thinking of making a more umani cavier, maybe using miso paste! Keep up the great work ?:^D

    I guess it would help to go a little slower. I bought a couple of bottles with tips for writing with icing so that the drops would be as small as possible, but I have yet to try it yet. I'm hoping to have small pieces of caviar and I can just watch a TV show while putting the drops in the oil. I figure that way, I'm less likely to hurry too fast.
