Maine lobster: LARGE vs small? Which is better?!

  • I have been told my whole life smaller lobsters have better flavor and texture. I just assumed it was because they are usually hard shells. The other day we caught a large shedder! That same day my wife asked for lobsters. So I figured what better day to put this to the test! Have you tried both? What do you think?! Small one for me!

    I watch all these videos and love them. Reminds me of being a kid and staying at the Cape in Ma. visiting from the west coast. My Dad and his brothers had great stories of pulling pots in the 30's and 40's. Your kids are lucky to have a good father keeping the way of life alive. Thanks Heaps.

    I watch your channel but have never tried to eat lobster before. Not once. I told myself that I’m not a seafood person but tbh, I’ve never tried it. I think it’s the texture of what it looks like. Can’t quite get past that. LOL. 😂

    Every Mainer knows the soft shells are better than hard shells because hard shell lobster tastes like you’re eating crumbly rubber bands opposed to that buttery goodness that is soft shell lobsters that you can’t ship live out of state and that’s why I’ll never pay that premium somewhere else in the country/world for lobster especially if it ain’t Maine lobster when I can make a trip home and get all the soft shell lobster my heart desires. You can’t beat soft shell lobster!!! End of story!!
    And I forgot to add, every Mainer knows claw meat beats tail meat ALL. DAY. LONG!!! Love Maine and love this channel, keep it going, Jacob. Matt from hometown Auburn, ME don’t miss an episode, I’m tellin you!

    I discovered that the shedders were always better then larger hard shell lobsters. I also learned the antenna trick while living in Maine back in 2016. Some folks even add some sea weed to the water.

    I have really liked every video seen from this channel ... good 'ol New England charm!
    One thing that I notice being said in passing on a couple of videos lately is guidance on how to eat a steamed lobster where skipping over the the body is mentioned. Along the sides, above the legs and behind the claws are clumps of tasty meat with a texture somewhere between claw and tail.
    So, I made a point of taking some measurements during my most recent lobster purchase [2 lobsters about the same size with firm but not hard shells with a total weight of 3.09 lbs].
    Claw meat = 4.44 oz
    Tail meat = 4.06 oz
    Body meat = 2.75 oz [for this size of lobster, the meat from all the legs is probably a couple of grams at most]
    Regardless, that is a material amount of the total available meat in the body [24%].

    Jacob, as a Marylander who has been visiting MDI nearly every year for 40 years, watching you tossing the bodies aside makes me die a little on the inside. Then again, the only time I'd consider it is with shedder chicken lobsters (which you did have 1 or 2 in the vid). But with any bug 1.5lbs or more, I'll pick the legs & body and put it on a salad.

    Love fresh lobster !! I grew up in Massachusetts and I always love eating 🦞, lobster 🦞 rolls or even lobster 🦞 bisque , lobster is one my favorite seafood dishes of all time !!

    I had a delicious lobster roll in Winter Harbor last weekend and I like to think it came from Jacob. I even got a picture of Rest Ash Oar in the harbor while I was there. P.S. - 1 1/2 pounds is the sweet spot between size and taste imo.

    Usually I opt for ribeye when it’s lobster day at the in-laws. I guess next time I’ll have to get a lobster so I can try the tail trick!

    Honestly I’m not vegetarian. But since I saw your videos, I love those lobsters and don’t want to eat them anymore 😂. You are so kind to them, cleaning from barnacles, give them snacks 😂 then release them whenever they are special lobsters. Thank you for your videos.     I'm pretty interested about the size/flavor difference, but I'm actually more interested in the vinegar in the butter! I've never heard of that, and I am a huge fan of anything vinegar based. How much vinegar do you add to the butter for your taste? preference?

      I've never heard of adding vinegar to the butter. However, I've never seen anybody in my family eat lobster. Being from Baltimore, we were crab people.

      I bought some clams for (steamers) from a guy this summer & was told about the "vinegar " adding to butter. I used red wine vinegar about a splash to my bowl of butter for dipping steamed clams into. It was "delicious). Next time I have lobsters I also will try it with vinegar & butter.

      For jerk vinegar in a traditional cruet add two cups of apple cider vinegar, one tablespoon of crushed cayenne peppers, one teaspoon each of maple syrup and turbinado sugar, ¼ teaspoon of Wrights Liquid Smoke ™ and a few dozen pink peppercorns. You can leave the cruet on the table. It gets better with age. It's great on collards, cauliflower, turnips, burgers. Try it in meatloaf or Sloppy Joes. Dang it. Now I'm hungry!
      🌶️,🌭🍤🌽🥦🥬🥔🍕🥪🍔🥩🦞🦪🍤🍥 sorry but yet another edit. Store the bulk of the jerk vinegar in an old school glass canning jar with the glass lid with rubber ring gasket and retaining bail clamp in the refrigerator. Only your fancy all glass, including the glass top, cruet can be left out to mellow and improve. As with anything else, when it goes empty, wash and dry carefully before refilling with the liquid in the canning jar. I go through a jar about every six months . The bottoms st the end can be run through a Magic Bullet with pickles of choice to make a decent relish for making tuna fish salad or hot dogs or whatever. It's also the gift that is perpetual. There used to be a product sold by Mo Hotta Mo Betta called Outerbridge's back in the late 1980's. The version available in groceries is close enough but the recipe as I gave it is banging good Mon. Thinking about it, there are probably ethnic Jamaican grocery stores that actually sell it.

      A secret with food isnto mix an acid with a fat... oil and vinegar... butter and hot sauce... mayonaise and lemon/lime... it enhances almost any food experience

    I'd love to eat lobster pretty much whenever I wanted. I grew up eating them!
    I used to when I lived in South Florida near the Keys. Caribbean or Spiny lobsters were pretty plentiful back in the day and my Poppa was bringing them home weekly. The seafood mongers were giving them to him. We were eating lobster tails like chicken! So good! I was spoiled! 🤣🦞🤤

    55 year old Mainer here! I love your videos! Been eating lobster my whole life but have never tried putting vinegar in the butter. Curious about that. Biggest debate among family and friends: to clip the rubber claw bands before cooking or not. Growing up with the wooden pegs, I swear I can taste the difference with the rubber bands left on. Thoughts?

      Also from Me. I think it depends on how much water you use & how many lobsters you are cooking. We usually take elastics off before cooking. (Habit)😊 I tried red wine vinegar first time this summer with butter & steamers. Very good.

      I don't think not removing the bands will kill you, just out of an abundance of caution, I see no reason why not?

    Nothing better than fresh lobster. Dad was a fisherman so we had lobster a lot growing up. Bake stuffed is my favorite, but steamed is also great. Then again, so is lobster salad. If the price is right, I still love it. I don't use butter, though. It's delicious straight out of the shell.
    The body meat at the top of the legs is delicious. It takes patience to get at it. We used to put legs in our pockets and suck the meat out when we wanted a quick snack.

    2 to 2-1/4 pound hard shells are just about the perfect size: enough to satisfy, not so much as to overwhelm (yes, there is such a thing as "Too Much Lobstah!" 😁)

      Oh my gosh, those are so good!! Up until a few years ago, my family went on vacation to Maine every year. It wouldn’t be a vacation without stopping at Kittery. Absolutely delicious! I want to hop in the car right now but I have to this week and Kittery is 18 hours away though.

    Growing up in RI we loved lobster from the docks.
    We also had a grandmother who never waisted the body. She ate that entire thing and loved the the Tomalie. We would hand over our bodies... that woman never wasted a thing. Portuguese share cropper from the depression Era. Then the shells are for garden.

      ​@lauriebennett6257 If you're patient and careful, you can get two meals out of a lobster. The tail and big claw for dipping , then patiently get the small claws, legs, and body meat for topping a salad. Eases the overall cost, and delicious.

    I've noticed that when you go too big with seafood it doesn't taste as good. Shrimp, crabs, fish all of it 👍🤤 sometimes smaller is better 😁

    You and your family are SO lucky that they have a father who provides the means for them to eat like KINGS
    ….LOBSTER, CRAB,and ALL manner of wonderful fresh fish and other seafood; couple that with a medium rare barbecued steak cooked over an open flame and a delicious salad…WHO COULD POSSIBLY ask for better than that ⁉️

    50 + years ago my father would buy a 10 to 15 pound lobster from one of the pounds in
    Boston and we cooked it in a giant pot on a custom made 230 volt burner that we plugged in the clothes dryer outlet.
    Then over to the work table with a hammer
    and hack saw. What a fun battle to extract the meat which was every where. The meat
    In the tips of the claws was sort of chalky
    but the knuckle meat and the body meat was great. The tails were Huge. The demand for these large lobsters was low
    so the prices were much less per pound.
    One lobster fed a family of 5.

    1 1/2 to 2 lbs for me always. Vinegar, fish sauce, sugar, ground pepper, onions and hot pepper for dipping sauce. I also like to eat them plain.

    I love the big ones just as much as small... lobster has been my favorite food since i was a little toddler and they do taste different at about 2lbs but the taste is still ahhhhmazing 💗💗

    I used to be obsessed with big lobsters as a kid, and at family parties we would always get one huge lobster instead of a lot of smaller ones. I've had dozens of lobsters in the 10lb+ range, and several in the 15-20+lb range, with the largest being about 22lbs. I can say from a lot of experience that the size has very little effect on flavor or texture. What matters is where they are in the molting cycle. Quahogs, on the other hand, are almost inedible when they get big. Steamers, size doesn't matter too much.

    Dad always said the same thing so I’ve never bothered trying to get a larger one,although I think If the meat was removed and separated like pulled pork or beef and made into sandwiches and probably used for salads it’d be ok.

    As someone who has had lobster before, the bigger ones are tougher and seem to have a chewier/stringy like taste. The smaller ones have a more buttery, soft mouth feel.
    Never tried vinegar with butter for the lobster.

    I used to volunteer at an aquarium and we had a very large, very old lobster. I used to think it was terrible that I would be hungry for seafood after volunteering (I mostly worked with educating the public about sharks and our shark inhabitants). I watch how you clean lobsters and I've never had a tail pop out like you do. It always sticks inside. Is it because the lobster is 'old' or not as fresh as you obviously get it or perhaps I am over cooking it (I usually steam them too).

    As someone who doesn't live close to the sea, I haven't had a lobster yet.
    It looks so delicious and I hope I won't be dissapointed when I try one for the first time (I will try to get a lobster as fresh as the ones in the video, ha!).

      As a lifelong Iowan, I've never had fresh lobster. You can find live lobsters in some of the grocery stores but they're out of my budget. I've eaten several frozen lobster tails in my life though and they were delicious, despite not being fresh.

    So cute. ❤ I got the biggest lobster in the tank at my local restaurant one year. I think it was $ 82.00. It was my birthday present to myself. Boy was I stuffed! The texture was much more tough than a smaller size but just as sweet to me ( though I’m no expert). Would love to be in New England or thereabouts and try the fresh local lobsters 🦞

    The idea is to tag where it is found in Gasped, them to see how far it traveled until possibly caught again. Then leave the tag on for the buyer to see/ use before cooking it! 😮

    One gripe. Those tail fins have a tiny morsel of meat that is just heavenly.
    But, i am a person that will spend an hour sucking the legs dry and digging that lil nugget from the base of each leg.

    I only wish I could get the meat out the lobster as simply as the way you show LOL. I agree that the smaller ones are sweeter but dang it, I need more meat so I always go for the big ones.

    0:50 for people that don’t have lobsters in their backyards. DO NOT WASTE THE LEGS THERE IS GREAT MEAT THERE!! And super easy to get out:
    Just take a rolling pin or something like it, start at the tips of the feet/legs and roll upwards and the meet will squirt right out the end!!

    I would love to be able to go out on a boat and catch a variety of sea food to eat, I've only ate shrimp from the ocean I would love to try alot of other things including Lobster 🦞, crab 🦀, shark, and alot of other fish

    On an Alaskan cruise, the 10 oz lobster tail was not nearly as tender as the 5oz tails. So I opted for 2- 5 oz lobster tails.

    I never heard of putting a little vinegar in the butter. I'm going to have to try it. I even eat the meat on the inside of the legs.I don't let any of it go to the waste. I know it's a lot of work, but I enjoy a good cold water lobster that has sweet meat.
