தேவையான பொருட்கள்
கொழுக்கட்டை தயாரிக்க
கொழுக்கட்டை மாவு - 1/2 கப்
உப்பு
நெய் - 1 தேக்கரண்டி
சூடான தண்ணீர்
சர்க்கரை பாகு தயாரிக்க
வெல்லம் - 200 கிராம்
தண்ணீர் - 1 கப்
பால் கொழுக்கட்டை தயாரிக்க
பால் - 1 1/2 கப்
தண்ணீர் - 1/2 கப்
ஏலக்காய் தூள் - 1 தேக்கரண்டி
தேங்காய் பால் - 1 1/2 கப்

செய்முறை
1. முதலில் கொழுக்கட்டை தயாரிக்க ஒரு கிண்ணத்தில் இடியாப்பம் மாவு, தேவையான அளவு உப்பு, நெய் மற்றும் சுடுதண்ணீர் சேர்த்து நன்கு கலக்கவும்
2. மாவு நன்கு நீரை உறுஞ்சிய பின்பு அந்த மாவை சிறிய உருண்டைகளாக உருட்டி வைத்துக்கொள்ளவும்
3. அடுத்து ஒரு கடாயில் பால், தண்ணீர், உருட்டிய கொழுக்கட்டை மாவை சேர்த்து 15 நிமிடத்திற்கு மிதமான தீயில் கொதிக்க விடவும்
4. இந்த கொழுக்கட்டைக்கு வெல்லம் பாகு தயாரிக்க ஒரு பாத்திரத்தில் தண்ணீர் மற்றும் வெல்லம் சேர்த்து வெல்லம் கரையும் வரை கொதிக்க விடவும்
5. வெல்லம் பாகு நிலையை அடைந்தவுடன் தனியே எடுத்து வைத்துக்கொள்ளவும்
6. பால் கொழுக்கட்டை தயாரிக்க வெந்த கொழுக்கட்டை மாவில் தேங்காய் பால், ஏலக்காய் தூள் மற்றும் காய்ச்சி வாய்த்த வெல்லம் பாகு சேர்த்து நன்கு கலக்கவும்
7. இனிப்பான மற்றும் மிகவும் எளிமையான பால் கொழுக்கட்டை தயார்

Tried this yesterday on an account of Ganesh Chaturthi with huge excitement and everything drooped after seeing the milk curdled at the last. Dish was a total spoiler and had to throw it away... Must have read the comments before adding hot jaggery syrup to the hot milk.

Followed this recipe and my milk curdled.😢
I made a 2nd batch. What I did:
1. I saved the cooked kozhakattai balls to reuse for 2nd batch - strain the whole thing, picked the balls alone and put it in a bowl of room temperature drinking water to remove the curdled particles - clean, remove from water and keep it aside
2. Bring the milk to a boil, simmer and add cardamom powder and keep in simmer - add the balls after 5 minutes and keep it in simmer only
3. Prepare jaggery water and NOT JAGGERY SYRUP - for 2 cubes of jaggery, I added 1/2 glass of water (100-150 ml). DO NOT LET THE JAGGERY FROTH - Instead, switch off the stove immediately after the jaggery melts into the water - set it aside to cool.
5. Remove milk from stove and set it aside to cool partially
6. Strain and add jaggery water while lightly stirring
6. Lastly, Add coconut milk in batches - I used 1 cup - use a spoon to add it in batches and add to the milk while light stirring.
Note: make sure the milk with kozhakatta balls is half cooked down before adding Jaggery water and coconut milk - never keep it in stove when you add these two.

It would have been better if you have mentioned that if you boil after adding jaggery water, milk will curdle. I found kolkatai cooked and then added jaggery water and off the stove. Bt as my husband said kolkattai needs few more minutes to get cooked, i on the stove and boiled some 5 mins. But totally the recipe got curdled and spoiled the dish 😖😖😖
