I am looking for the best way to use our sous vide to impart intense flavors. For example, we are making a cocktail and the concept is to use some sort of tea. I thought a tincture would be best to get an intense flavor from the tea. What do you suggest we make to get the best flavor?
I made a quinine tincture by grinding cinchona bark and letting it sit in regular vodka, 40% alcohol. It seems a bit hard to find food-grade 96° alcohol or anything comparably potent near me. It worked, but do you recommend going higher and if so, to what potency? Thank you very much.
40% works as quinine is readily soluble in alcohol. Just be careful about not using too much quinine in a drink, it can have side effects at higher doses.
@@Artofdrink Thanks, I am mindful. In the end there is about 1oz of tincture per litre of tonic water after adding it to the mix and then diluting it further with soda water.
Incredibly useful! Would you say that maceration / tinctures or extracts will be inherently inferior when it comes to capturing aroma?I find it’s difficult to really capture aromas when macerating but I don’t know how to make my own essential oils.
Hello really great video, I tried making a rosemary tincture but it ended up browning because of oxidization I think. Is there a way to avoid this happening? Thank you in advance and have a great day
Thanks, and typically, the chlorophyll in plant material oxidizes quickly and turns brown. It is hard to prevent oxidation, but a little vitamin C (ascorbic acid) can keep it green a bit longer. Higher alcohol content also helps.

Is there any disadvantage to making my tincture with 95% alcohol? My goal is tinctures for cocktails (so add a couple drops to the drink) Should I dilute it down to 50% before maceration or after? I can never be sure if the 100 proof spirit is used because it's best or because the higher proof spirits aren't always available. You seem to be one of the most knowledgeable people on this subject. Everyone else just wants to make tinctures for CBD or weird "medical" uses. Thanks!
Using 95% abv will only extract a certain range of compounds that will turn hazy when added to anything with water. The best extraction abv is between 55 and 70%.
@@Artofdrink Thanks for the reply! If that’s ideal I’ll just combine vodka and Everclear to raise the vodka proof. Might as well use it up anyway, as I only bought it for making tinctures.
The only downside is that it will extract most of the terpenes which are not soluble in water, so can make whatever you add the tincture to cloudy. The 65% abv level doesn't dissolve as many of the terpenes making it less of an issue, but there will always be some.

A coffee filter works but it is slow. I use a vacuum flask and filter funnel (it's much faster). Check out the "How to Make an Essence" video, I use it there.
You can dilute an extract 10:1 to make a tincture, but essences are a completely different thing so an essence is just an essence and shouldn't be diluted.

Instead of the essential oil base, could 1oz of dried herbs to 15oz EtoH work for making Essence? Is the ratio the same? Cheers :)

Activated charcoal would probably remove the colour, but may effect flavour. Experiment and see what happens.

Maceration is inferior for a number of reasons but is still valuable for some things.

I wanted to ask you. If I take a tincture and add syrup to it does is it considered a liqueur or does it have to be distilled?
No, a tincture in simple syrup is just a flavour syrup. To be a liqueur it needs a minimum amount of alcohol, usually 17%.

Any of the syrups in the videos I make will work, just use simple syrup that is 1 part sugar to 1 part water and then add the flavour.
