Because of this, manufacturers are forced to maintain a higher PH level. But at home you can make it lower. Again, citral interacts with acids here too, but why doesn’t it give an unpleasant aftertaste? Or does the reaction just happen over time and not immediately? Then for how long? Is it even possible to describe this negative reaction of citral with acids in more detail in the context of drinks? I am involved in fermentation, specifically making fermented drinks. I noticed that if you accidentally squeeze essential oils out of the zest of lemon or other citrus fruits, apparently by interacting with lactic acid (which is in ginger bug), after a few hours, firstly, fermentation stops (most likely due to phytoncides), and secondly secondly, an unpleasant smell appears, either of manure or of an old kitchen rag. However, the problem disappears if, before adding the starter, the infusion with essential oils is heated a little, then fermentation will proceed and there will be no unpleasant smell. What could it be? Lactic acid is organic, and in theory there should be no reaction with citral.

And juicing fresh ginger to make ginger ale the same way. Very refreshing. Im looking forward to a "cleaner" flavor solution that doesnt foam up as much and holds carbonation a little better. New member here - i accidentally used everclear 95% instead of vodka, does this change anything to my process? Will the oils still separate to the top?
Well, stirred on plate for 2 hours, then left overnight. No separation, oils are completely dissolved in my attempt at essence... the citral, lemon 5 fold and key lime are dissolved in the 95% everclear, so there is no way for me to separate it out... can this be used as the essence? Honestly the oil separation part confused me because I thought I saw you create some essences without needing to separate oils...
I love me some lemon lime flavor...but I've been cutting back on sugars so I mostly drink flavored sparkling water nowadays with actual Sprite or 7-Up being an occasional treat due to the high sugar content. I've also kicked high caffeine in my 20's (late 30's now) so most sodas are out for me unless I take up to making my own to cut out caffeine, most of my intake of that comes from black tea..which in my case is unsweet cold tea more often than not. In my younger years I was addicted quite badly to Mt. Dew and needed at minimum 24ozs a day to function without starting to suffer from caffeine withdraw....I usually had anywhere from 3-4 cans a day on average with sometimes going up to 5 during the summer.
The high sugar levels are worse than high caffeine levels. Most of the soda I make here is half the sugar of commerical products. In the next few weeks I'll be doing a video on low sugar/calorie methods. Cheers

50% abv vodka will always be your best friend for extracts. It doesn't over extract the water insoluble materials, and gets all the flavours. If I only had access to 40% vodka, I would add 10% to 20% by volume of propylene glycol to the vodka and that would make it a better solvent for extract. 95% Everclear over extracts, so you should always dilute it, so 600 ml Everclear plus 400 ml of water gets you just below 60% abv.

Yes, 50% to 60% abv is ideal, but many people only have access to vodka at 40% so that's why I suggested adding propylene glycol to boost the solvent power. If you can get 50% to 60% abv then no propylene glycol is necessary.

@@1Garyguitar1 definitely benefits to removing the oils. The terpenes will dissolve in alcohol but once you add that alcohol to a syrup or soda they will come out of solution.
Serving solid means adding the carbonated water to the glass first, then slowly pouring the syrup into the soda water. If done right, the soda water doesn't foam, keeping most of its carbonation. And as long as your syrup is not too thick, it will mix uniformly. It was the preferred way to serve many drinks, specifically Phosphates, at soda fountains in the late 1800s

Yes you can. I even add a small amount of citric acid, in the other direction, to the preservative solution to give it a pH of 4.0ish.
It's cool to see this and compare it to culinary techniques like oleo saccharum -- especially with regards to control.

Thanks. If you get above 50% abv on the alcohol, you probably don't need propylene glycol.

Do you need to separate the essence from the oils? Could you just add Gum Arabic to bind the oils into the water?
I prefer to separate out the oils because creating an emulsion of the oils with gum Arabic is more difficult than people realize.

Maybe, depends on how dilute the extract is, and typically if you look at grocery store extracts they are about 10 to 20% oil and the rest is alcohol.

Citral is a liquid, you would have to bind it to something like a sugar or starch to make it a "powder".
