Hi Joel, no calf (when I was a child, my grandfather helped with the birth of a calf, he recognized me and he was like a dog to me... but you know destiny... so never again !), no lamb, no horse for me ... But always a pleasure to follow your channel and to see both of you
....I am much the same way...I could not dine on Lamb, etc , having been around these animals and as much as I can appreciate Chef Joel, and his wonderful Talent,... it is a ' no " for me. I actually ate Lamb , ... but I didn't k n o w.,at the time , that's what it was..... because of the way it had been prepared, on a rotisserie, barbecue spit ....And that was the last time I ate it.... after I found out and that was in ... 1998. Does this dish he prepared look delicious ? No question. But we all have our reasons for not partaking of certain things.

Some foods are totally barbaric where animals are killed in the worst way as a recepie instruction. In some countries eating pets is a nono in others they even eat dogs and horse. Fantastic! This is also how I season meat - I make some quenchers and put the garlic in them. But with the herbs and preserved lemons on top, it's much, much better! Wow!!! ❤

Also, what mode should the oven be on? bake, fan bake, fan forced? If you can only find a 3kgs leg of lamb, instead of a 5kgs, how should the cooking time and temp be updated? Let me know, thanks

A really nice recipe! And of course, it's perfect for Easter. Therefore, a clear LIKE. But - I'm not going to cook it. Leg of lamb is just too expensive for me. Lots of bones, tendons and loss. At my online retailer I currently pay: 5 Kg = 108,59 € (21,72 €/kg) . At the local butcher it is more expensive. I'd rather take a piece of beef. 👍👍
