I used to be that way too! Sometimes I still am. I often use to shy away from anything requiring the terminal which was very limiting, but finding helpful tutorials and practicing more and more can give confidence! I am so glad this helped!
This is great, but how do you see the variables that are saved in jupyter? I am running a jupyter notebook in VS code, and the R kernel works just fine, but I cannot see the variables!

It took me a while to find, but you need to update the enviroment R version in most cases the root(base) enviroment. Use this code in the anaconda prompt. conda install -c conda-forge r-base=4.1 r-irkernel

I would suggest setting up a new virtual environment in your anaconda. Activate it and try it again.
