For commercial, we always have welded corners. No top fasteners. Usually front cleat and rear neophrene screws. Preferred would be front and rear cleat. This job looks like a residential install, way down south in warm climates with no wind or uplift.
Where can I custom order coping? My local roofing supply store I guess? Home Depot and Lowes don't carry this type of flashing. They all seem to only have drip edge.

You should do a 1" rib turn up at your outside/inside corners and overlaps. Flat seams leak!! Then cap ribs with a little cap and rivet it on! I repair coping cap that's done like this all the time that leaking!!

What’s so hacky about it? it’s functional. I doubt they would risk their license by doing a hacky job, as long as it passes inspection, that’s all that matters.

I always peel tge plastic where ever I lap metal to secure lol then when I am done i peel the rest so the metal doesn't get scratched haha. I just run a straight blade lightly and tear off the plastics.
Sam Campos ...any sheet metal company can fabricate it for you, before you order it, measure it, make sure you give at least 1" inch wider ,sometimes the wall are crooked so count that also.

If i install coping like this here in canada i was fired instantly! Here we do the male and female and wrapping. We never use screw on top of the cap and we never install cap without a starter...

i like the cleat coping we use, we dont leave screws on top of the coping. i hate seeing screws on top of coping.

That's because you never put screws through the top it just invites water.
I’ve seen wind rip coping right off. We only top screw if we don’t have a locker for the coping and use grommet screws

You'll need to use a drip edge and flashing combo. Hard to say without a visual.
Counter flashing before your roofing.

Why don't you invest in a tri-pod or a headmount? That is how you won't have to worry about thee filming part and have both hands to work efficiently.

What about a hold down clear prior to installing the coping? Screws on top is not a great technique to use.

Because if you screw on top that’s where the water will go. The purpose of a flashing is to shed water
