    3 pieces of advice from an Egyptian:
    1 - Don't use oil
    2 - Mix by hand. The friction from using a machine heats it up and the bread will be more chewy than doing it by hand.
    3 - Lower the oven temperature and let it brown a little

      That friction creating heat thing is nonsense. Your hands are 98 degrees, hotter than any of that "friction" is going to be. Now, you're much more likely to overwork the dough if you use machines, because not having to use effort means you won't feel the need to stop, but "friction" is definitely not the problem.

    Hi...just want to if you are using whole wheat flour.. means the whole kernel grounded or is it all purpose flour with the bran removed.
