We love “latkes,” potato and onion pancakes. Sometimes we do the traditional applesauce accompaniment and sometimes we salt & pepper generously and add a dollop of sour cream. Being Americans, some days we simply pour on tomato ketchup 🤭

Little hint if you don’t already know...cover pots when cooking with water. water heats quicker as heat is contained, and small diced bits cook quicker as well. In time maybe you could save for a countertop oven. I love my Emerel airfry oven,it is multipurpose and one can do a lot with it. Try grating cheese into the potato cakes and don’t tell young one..extra protein. I also add grated or leftover vegs in as well. You do a great job. Susan

Love your you tube channel I have picked up lots of tips about food but also about growing food.Your chatting makes me feel like I am listening to a friend in her kitchen. I too live potato cakes and hash browns. I some time put a bit of curry powder in with the potato to give your potato cake a bit of spice taste.

Thanks lizzie just think a nice snack instead of a packet of crisps you could make potato cakes ot potato cakes with beans and sausage and bacon mum used to make us crisps with sliced potatoes the were 6 kids in the family so mum used to make crisps cos money was tight and as kids we were always hungry love fran xxx
I make something similar, called Latkes, grated onion , potato etc, no herbs or garlic, fry in oil, when you remove them from the oil you sprinkle them with cinnamon. Omw they are delicious.

I'm so pleased your son is home safe and enjoyed his time in London. I can imagine how worrying it is to send them off on their own way. I used to fret if my cat went over the garden wall 😹 It is desperately worrying times for so many people at the moment. It is actually sickening when you think about it too deeply. I really do despair, especially when you have some who are getting ever more wealthy on the backs of people who are not so fortunate. It feels very similar to what was happening in the 70s. My family were very poor when I was growing up. If we had chips or mashed potato one day my Mum would save the potato peel so that she could fry them up for another meal the next day. And they were honestly really delicious. We loved them as kids, probably more than the chips we had the day before 😅 There were days when we would come home from school and all we had for our tea was a bowl of baked beans and some bread and butter. I don't think we minded, but I'm sure my Mum and Dad felt wretched about it. I'm sure your Dad will remember this but back in the 70s, before there was any real awareness of food poverty, there were what was known as food mountains. This was perfectly good surplus food that was just thrown away. There was an outcry about it so they started to give it out to needy people all around the country. I remember queueing up with my Mum for free butter and cheese. The queues would be huge. I suppose this was a similar thing, and maybe the seed of the idea, of our food banks today. I can't help but feel we are slipping back to these gloomy and desperate times. I really hope not, but things feel very unjust at this moment in time 😞 On a lighter note the potato cakes looked delicious. I'm sure your son appreciated them when he got home. Try the fried potato peels sometime. Or maybe baked if you're not keen on frying 🤗🥔
Yes he remem ers the 70s,he grandma used to breed rabbits in the back garden and he used to go shooting pigeons so they could have some meat. Im not saying I'm in that situation yet but the squirrels around here are looking more appetising by the day 😂 I should try the potato peeling crisps on day xx 💕
It's awful the prices,my electric and gas has gone from 170 a month to 240 😭😭 that is for both but how do they think we can go on , Keep warm or don't eat !!😡 You take care of yourself and your son xx
Oh gosh it's so awful isn't it, mine went up before Christmas and hasn't gone up again yet. I'm scared now I'm going to be in debt with them and own they lots of money. Take care too xx 💕
Hi Jan, i cooked it on 180 in my slow cooker for 20 mins with tinfoil over the top so it didn't burn. Then I took the tinfoil off and cooked it for another 20 mins to brown the top xxx 💕

i use recharable lights and also solar and my brother got the folks strip lights that use far less power
Just had a look at the folks strip light, they look amazing. Bet it saves you lots on your electricity bill 💕

Keep potatoes in the veg/salad drawer in the fridge...they will keep for WEEKS and i promise you...THEY WILL NOT SPROUT.!!!

When I do that, they are sticky and sweet when cooked. It seems some of the starches turned to sugars. Very odd.
