This also applies for instrumentation! A good song is full of non chord notes and their resolution. And really, thats one of the biggest hurdles for beginners singing and composing only on the chord notes
I feel like Chino Moreno in his work with the Deftones, it's all app and no release at the end of a lot of his phrases. You would know better than I do though!

Everything feels like theory to me, like I'm listening to an audio book. But when I take out my pen to write I have no clue what to do or where to start or how to apply what I have learned. What software are you using to see the notes in the melody over the chord number? Thats a massively helpful tool for analyzing melody!
