So when we put sitaw, bok choy or kang kong I would recommend cooking it then taking it out based on your consumption need and amount. This is a healthier way of enjoying vegetables.

It's from South India and before putting the veggies we boil some lentils and then add anything that's a vegetable with some tamarind syrup and boil it. I'm big fond of putting okra in my sinigang when I make it. It usually has chicken instead cause fish in general is so expensive here //OTL
But also, I will literally eat any veggies if it's cooked lightly with sautéed garlic and either that granulated chicken broth powder (the stuff with msg of course) or with msg and toyo. Extra points if the veggies still have a little crunch to them and that pot is gone.

When it comes to taro, we (Pacific Islanders) like to boil it, then pour out the water, pour in some coconut cream and leave it to boil for another few minutes.
As for veggies (which I'm not a fan of), I like to boil it with any meat and seasonings just to take out the veggie flavour but keep the nutrients.

Have you ever tried putting lettuce in your sinigang? When my parents came to the UK in the 70s veggies like Pak choi and tamarind were hard to get, so my Mum made her version of sinigang so she could get a taste of home. Sometimes if I don't have the sinigang mix from the shop I still use it. She uses loads of lemons in place of the sour tamarind, then onions, tomatoes, green beans (in place of the long beans) and then lettuce (in place of the Pak Choi).

You should try crushing the taro in the soup, it thickens the soup a bit and complements the sour taste of the sinigang. But the best sinigang would always be using fresh unripe tamarind.

That’s my favorite way too! Sometimes my dad adds some gabi (it’s like a potato but it looks like taro) and will make it with some red snapper

We call that sinigang in the philippines. We use fish or shimps as well. For souring agent we use tamarind or guava.

I think our tex-mex equivalent would be caldo 🤷🏻‍♀️🤷🏻‍♂️ we usually cook beef potatoes green onion corn cabbage carrots and green beans in a beef marrow stock :) we season with garlic onions maybe comino and salt of course :) served really hot and great on a winter day. We have a gas stove so when it froze here in Texas we had that for several days 🤧✨

Literally adding this to my recipes to try! So easy and healthy. I googled how to remove the bitter aftertaste from the radish & turns out I just need to soak the radish in cold salted water for a few mins. after peeling and slicing them
