I ferment mine usually, I roast them with other root veggies or satee them
We have radishes that might be woody...do you think canning them would take the woodiness out of them?

So if the lid doesn't seal, why not eat that one right away?
If one doesn't seal right sure no problem. But when a whole batch does seal right that is another story
