- Ofe Akwa is a traditional Igbo soup made with palm nut extract and often paired with proteins like fish, meat, or seafood. It’s rich, flavorful, and usually served with rice, yam, or plantain.
Ingredients:
• 2 cups palm nut extract (or fresh palm nuts)
• 1 medium-sized smoked fish (or fresh fish)
• 1 pound goat meat or beef
• 1 small onion (chopped)
• 2 tablespoons ground crayfish
• Soya sauce (optional)
• 1 seasoning cubes
• Salt to taste
• 1 teaspoon ground pepper

• 2 cups sliced uziza or scent leave
Instructions:
1. Prepare the Palm Nut Extract:
• If using fresh palm nuts, boil until soft, then pound and extract the juice. If using canned palm nut extract, skip this step.
2. Cook the Meat and Stockfish:
• In a pot, season the goat meat and stockfish with salt, onions, and seasoning cubes.
• Add water and cook until tender.
3. Add the Palm Nut Extract:
• Pour the palm nut extract into the pot and allow it to cook for about 10 minutes.
4. Add Other Ingredients:
• Add smoked fish, blended bell pepper and onion crayfish, and pepper. Stir and let it simmer for another 10 minutes.
5. Final Touch:
• Add the uziza or scent leaves and let it cook for 5 more minutes. Adjust seasoning if needed.
6. Serve:
• Enjoy with rice, yam, or plantain.
