I 100% understand what you're feeling. I have been in the industry for about 8 years now. I opened a cafe and shut it down because of burn out. If you ever want to recommend a new grinder on the off chance you will be around again though Mahlkonig is releasing the E80 GBW which holds up much better in high volume environments.
Girl I totally relate. After 2.5 years in hospo I’m ready to move on. The burn out is real and it can be so difficult in hospo right now, with staffing issues, covid requirements and people honestly seem less tolerant. I’m ready to move on also

The old “shit what milk did I just steam smell test” haha all the alternate milks these days make it fun don’t they?! lol hello from a Perth barista - Just found your vlogs- love it.
It is busy and they all count on you. But, you are also lucky, to not have anyone in-between your legs, in that small barista space. And have Nick from outside of your space, to fill cups and help a little. I will agree that you need a more precise grinder, so to avoid throwing out that much coffee, and to have the portafilter to rest straight there
I've heard the GBW isn't as handy as expected, the built-in scale on the grinder is really sensitive that a little vibration on the counter will affect the weight. You won't be getting precise doses every time which requires you to weigh the dose yourself again. A regular E65s or even E80s would probably suit better.
Tbh, i like the sound of the frothing of milk and the smell of coffee in the morning beside the coffee itself. Im addicted to coffee. There is this coffee shop i go to here in sydney and they make a sick cup of fw. In melb, i go to the one near bourke st…nashi.

They say being a NASA cientist and maneuvering a drone on Mars is stressful, that's only because they never had to prepare lattes and other coffee drinks with multiple variations for thousands of customers waiting both on the side and those still in line to pay. Honestly if you can survive this you should fear nothing else in this life

How often do you calibrate the grinder ? it seems the machine keeps failing for correct dose. In the meanwhile, the cafe is lack of homogenous workflow, you should see the ArtistiCoffeeRoasters channel for the tips.
im just burnout this day, because it's beyond my capacity to make coffee alone in a very crowded cafe, and my boss doesn't care, it seems this week I will free myself from the toxic pressure of my boss

Oh Laura btw... that grinder is only meant to do about 2 -3 grinds a minute otherwise the grounds start to get hot which will affect the espressos weight over a little bit and then you will start to get inaccurate readings.
your cafe vlogs are your youtube channel 😅please dont stop this and start doing what you ate, what you bought etc . . everyone is doing that. IN many ways cafe vlogs are so therapeutic and unique as a content.
unless you ask for it, we won’t, unless you’re ordering somewhere like Mcdonalds which adds sugar syrup by default. You can always ask the barista of whatever place you’re at though!
