    BETH'S VEGGIE LASAGNA ROLL UPS
    Serves 4-5 (PRINTABLE RECIPE HERE) bit.ly/2JiYup8
    INGREDIENTS:
    For sauce:
    2 tbsp (30ml) olive oil
    1 cup (150g) yellow onion, diced
    1 cup (150g) zucchini, diced
    1 cup (150g) white mushrooms, sliced
    salt and pepper to taste
    1/3 cup (80 ml) dry white wine, or chicken broth
    26 oz (736 g) of chopped tomatoes
    2 cups (475ml) tomato sauce
    ¼ tsp (1.25ml) salt
    2 cloves garlic, minced
    2 tsp (10ml) Italian seasoning spice blend
    For filling:
    3 cups (700ml) whole milk ricotta cheese, drained for at least an hour
    1 egg
    ½ cup (120ml) Italian blend cheese
    1 tbsp (15 ml) fresh chives, finely chopped
    1 tbsp (15 ml) Italian flat leaf parsley, finely chopped
    1 tbsp (15 ml) basil, finely chopped
    salt and pepper to taste
    For assembly:
    1 package (12-sheets) fresh lasagna noodles
    1 ½ cups (350 g) grated mozzarella cheese
    8 fresh basil leaves for garnish
    METHOD:
    Place ricotta cheese in a fine mesh strainer over a large bowl, and drain in the refrigerator for at least 1 hour. This will help the ricotta lose some of the water which can make your sauce too runny.
    Heat olive oil in a large pot. Sauté onions until fragrant and translucent, then add zucchini and mushrooms until cooked and tender. Season with salt and pepper. Add wine and cook until most of the liquid is evaporated.
    Add chopped tomatoes, tomato sauce, salt, garlic and Italian seasoning. Simmer for 20 minutes.
    Meanwhile, combine the ricotta cheese, egg, Italian cheese, herbs and salt and pepper.
    Transfer tomato sauce to a 9 x 13 (23 x 32cm) casserole.
    Spoon out ¼ cup (60 ml) of the ricotta mixture and place on one end of the lasagna noodle, roll it up, and nestle into the sauce. Spooning the sauce on top. Continue the process until all lasagna noodles are filled and nestled in the sauce.
    Top with the mozzarella cheese on top of the entire casserole. Garnish with the fresh basil leaves.
    Bake at 325F (162C) for 40-45 mins until cheese is nicely browned and sauce is bubbling underneath.

    Lasagna is a rich treat I like to have every now and then when dining out. I never tried to make it at home because it seemed so complicated and time-consuming with all of the layers required. You made lasagna so much less intimidating and approachable/achievable for me with this recipe. Thank you, Beth!

      Yes I think the ricotta was an "immigrant" invention as the Italians left the "old country" I really don't know why? And would love to know more about how this came to be. Because Italians are always like what ricotta cheese?! NO! But you see the ricotta pop up in lasagna in a lot of places around the world where Italians immigrated. So I need to get to the bottom of this! Ha! Keep you posted! xo

      Oh...I also had a request...so..I told you about the birthday cake which was a hit...right...
      Well...the birthday man's wife (Who happen to be my landlord and landlady...or should I say...my American parents) tried to make steak in the oven which she was not very happy about...it turned out to be tough and dry and all its juices were out...Can you please help with an oven baked steak without a grill which can still be moist and soft. I would really appreciate it and so would she...Thank you! :)

    I've actually never had either of these lasagnas. My family always does lasagna, red sauce, mozzarella - no béchamel or ricotta. I'll have to try both of your suggestions!

    I would like to skip the egg in ricotta mixture. Do you have any recommendations for alternatives? Will it get too runny if just skip eggs? Thanks for lovely recipe!!

      Oh sure, you could skip the egg, which I use mainly to bind the cheese and make the filling richer. But you will be ok if you 1.) Allow the ricotta to drain overnight 2.) Add a bit more Italian blend cheese to the ricotta to bind it more a 1/3 of a cup should be enough. 3.) And bake right away, don't roll up ahead of time and allow to sit. Roll and bake! :) Let me know how it goes! I hope you enjoy!!

      SilverCharmbracelet not really, it has almost the same taste/texture of regular pasta. But then again, pasta is the best choice. Just an option for people who can’t eat gluten.

      Yes! This would be great! And eggplant works well for this too! :) . Just slice thinly and then roast the eggplant first with olive oil, salt and pepper. That way it is pliable and easy to roll :)

    I'm curious as to why you use white wine here and not red, I always thought it was red wine for meat stock and tomato sauce so I am interested to try this version.

      Great question! I always argue with my Dad on this one! Ha! For me I think the white wine just gives off a better flavor, where the red wine always seems to be too bitter and noticeable. The white wine mellows out and just mixes better with the veggies :) But that's my personal opinion! Ha!

    Great....question: since I have a finicky daughter, who shies away from vegetables, no matter how sneaky I try, can I use that same method with traditional meat lasagna. I really like that idea. One more question, was that homemade sauce or canned? ..😘

    I will never ever understand American lasagna. The ricotta is heavy, the tomato sauce is still acidic, I really don't get it. I grew up with my family cooking lasagna with bechamel and a light tomato sauce with a natural sweetness that came from simmering for about 3 hours, and boy I miss my dad cooking that lasagna because I haven't found nothing that can compare.

    I always wonder, when Americans measure veggies in cups.. do you dice a whole onion and measure a cup? What happens to the rest? In european recipes you will only have ingredients like 1 onion, 2 carrots etc. Please explain..

      That is such a great question! And I think it steams from the fact that America is such a big country that depending on where you live an onion or a carrot can be different sizes! For example, I grew up on the East Coast of the US and onions were the size of tennis balls, then moved to California and here they are the size of grapefruits! Ha! So I think the precise measurement just assures that no mater what size produce you may be used to, 1 cup is 1 cup! We save the rest in the fridge for omelets, stir frys or salads :)

      ​@@EntertainingWithBeth Ah yeah I see! So here in germany surprisingly all our veggies are usually same size, so we dont care so much for weighing it out! So you do cut a whole onion, measure it, and store the rest? Fascinating
