South Africa is made out of multiple provinces. Each province has a professional rugby team, these are the first class teams, bulls, lions cheetahs etc. Out of these teams AND players that play in other countries 1st class leagues, the National team Springboks are selected to play test rugby against other countries national teams
That one guy they interviewed Tendai "The Beast" Mtawarira is another all time rugby great. Every time he touched the ball/tackled someone/won a scrum the entire crowd yelled "Beeeeeaaaaast" in a deep voice (even the opposition crowds when the Boks played overseas/away from SA).
"Springboks" is just a nickname for the national team of South Africa, which plays perhaps half a dozen games against other countries each year (more in a World Cup year). The other teams mentioned are their club sides, playing every week throughout the season. Players have contracts with them and earn all or most of their money from those contracts. If they're good enough to also be picked for the national team, that is a special honour which does not come to most professional players. The national team is selected from a variety of the top club sides, perhaps including club sides in other countries if that's where a South African player holds a contract and plays rugby every week.

The Blue Bulls is like your NFL teams. The Springboks is like if the NFL took the best players and made a USA national team to compete with the best teams in the world. The USA used to play rugby but then changed rugby to football, cutting out the need for players to have multiple skills. So obviously there aren't other countries that play NFL because they still play rugby.
Just to give a little more information for you: the Lions is a big big thing for South Africa, New Zealand and Australia. It’s a super team of English, Irish, Scottish and Welsh players and they tour SA, NZ and Australia every four years. They’re best of 3 series. The Tri-Nations was the annual competition between NZ, Australia and SA. It’s called the Rugby Championship now that Argentina joined. The Heineken Cup is the competition between Europe’s best professional rugby teams (not national teams). Bakkies was the player you wanted on your team but hated to play against. All Black fan, American who had the privilege to live in New Zealand for several years.
