Thank you for having me as your guest today Hoon. I am a new coffee "hobbyist", probably where you were when you started. So excuse my lack of sophistication. Also, remember that I grew up on perked coffee in the 60's, so my palate is a wee bit different. Boy, you sure do have quite a collectiom of gadgets!!! It was a genuine education for me... more than you will know.
@tucsonbubba1574 while everything is relatively fresh can you describe your methodology a bit more as you noted you like predominant chocolate notes but then liked the 83mm MP and MC5 for the predominant lemonade flavor, but where chocolate was present. So the 83mm HU burr with most dominant chocolate dropped in your preference to last, or Mizen 102mm was 4th..? It seemed you liked that the HU was mostly chocolate with some lemonade in comparison to 102mm Mizen which was (I guess) "too mediocre"-neither dominant chocolate, nor enough pink lemonade. Seems because the MP burr was more extreme lots of lemonade upfront but then chocolate flavor kicking in as it cooled is why you liked it the most..(?), but then you liked how the MC5 was very balanced equal parts lemonade, chocolate and caramel where MP was more 50/50 lemonade to chocolate...(?). Well, I have a skewed palate. That is, I grew up with things such as perked coffee and robusto blends in the 60's to 70's. So things like bitter notes are part of what is acceptable to me. But realizing that most people would like a coffee that has pronounced, distinct and balanced flavors is how I would judge a coffee for other people. I liked MC5 because it produced the pink lemonade, caramel /toasted sugar and cocoa notes most distinctly and they were balanced nicely. The caramel was pronounced and balanced, whereas it was merely "present" in the other grinds. But all of Hoon's grinders are great...he makes a mean espresso! Yum.
Hoon, did you ever compare the 83mm HUs to the stock DLC espresso burrs? I'd love to know if you've tried the DLC's with espresso and filter. Thanks!
