- Ingredients for filling
4 egg yolks
90 g sugar
50 g flour
130 pistachios
500 ml milk
5 tbsp extra virgin olive oil
* Mix egg yolk with 90g sugar
* Add 50g flour and 100ml milk, mix until the flour dissolves
* Warm up 400 ml of milk on a low heat
* Crush the pistachio nuts using a blender with 5 tbsp of olive oil
* Once the milk is warm (not boiling) add the pistachios and use the electric mixer on a low speed to combine
* Add the egg mixture and continue to combine while the saucepan is still on heat until it becomes creamy
* Tips: add a small amount of flour if the cream is too runny
* Transfer the cream into a bowl and seal the bowl make sure it completely covers the top of the cream so no air can get in.
* Put the cream in the fridge for atleast an hour
