I’m a big fan of this guy but some stuff seemed a little surprising to me as a Japanese. - kombu should taken out right before the water comes to boil. Otherwise flavor of kombu could be too harsh. - heat should be turned off or down to lowest when you put bonito flakes in. - saikyo miso tend to be sweeter so some people may consider it unusual choice for miso soup. And soy sauce in miso soup isn’t really done. - any thing that goes into miso soup such as mushrooms are normally cooked in dashi before adding in miso. Roasting does sound pretty good and I might give that a try. There’s Ichiban dashi and Niban dashi which the methods differ though ingredients the same. I think your method seems like a mix of those? Anyways great video and please keep it up👍

Hey Matt .. just wondering as I've watched a LOT of your videos, do you/don't you wash the mushrooms/veggies etc before you cook them? Just can't really tell as you always start cooking after taking out of packaging
Why not a revisited classic Tomato soup ? My mom does it with celery and some other simple ingredients like salt pepper, maybe some herbs sometimes, and it simply tastes too good for how simple it is. I'd love to see your take on it !

Matt, out of curiosity. When I make quesabirria tacos, I always have a good bit of conzume leftover. I keep thinking I could turn that into a a bada$$ soup. Any ideas? Maybe use it for the pozole???
