Ciao from Florence! What's your favorite beef dish of all time?
It’s completely different than a bistecca (which I also am nuts about), but I’ll put brisket from Central Texas against any beef dish in the world, and it will come out on top. Beef + salt + pepper + smoke = heaven.
I will admit that I’ve done Italy so many times that I don’t have a need to go back to Toscana (too many tourists) BUT I have thought of making a Firenze pit stop on the Milano-Roma Frecciarossa just for a bistecca.
Too many to pick one. We are so lucky to live in a world that has Texas bbq brisket, Fiorentina, chuletón Gallega, Kobe, picanha, and churrasco. (That’s US, Italy, Spain, Japan, Brasil, and Argentina. ) Love this episode, especially the street food and cheese shop!
Definetively the "Bistecca" or "Ciccia", like the "Bistecca alla Fiorentina" is called in Florence and in most other parts of Tuscany. I would even go one step further. It is not the best beef dish. It is the best dish of all time.

🤣 As I'm sitting here trying to decide what my favorite beef dish is I realized that I really like beef slow cooked. Beef bourguignon is my favorite although I really like birria with beef too. I'm gonna have to try peposo!
My favorite Beef dish is traditional Steak pie. Sometimes we put sausages through it.
When I visited Firenze, I made a point to ask the hotel concierge where were the places that he or she would go to eat. Amazing foods at restaurants that primarily only locals went to. I ate through Italy and still lost 6 pounds from all the walking. Love, love, love Italy.

I'm so happy you made an AC2 reference... When I went to Firenze, I had massive deja vu going to the church... I was freaking out how I felt "I've been here before" it took me a whole 10 minutes to remember why, that being the tallest tower in the game

I sang an Italian Aria in high school about a young girl in love who threatens her father to throw herself off of the Ponte Vecchio. I went in my 20s and definitely sang all over that bridge like the weird tourist that I was.

A fun fact about Ponte Vecchio is there is a secret passage (the Corridoio Vasariano) that links through the bridge Palazzo Pitti (the De Medici palace) to Palazzo Vecchio (the city hall) so that the duke of Florence could go from one place to another without passing through the crowd.
They say Cosimo de Medici ordered the butchers to move from the bridge and to open jewels shops so to avoid the smell when he passed.

Io sono fiorentino, per noi il lampredotto è una fede! Peccato che la vera salsa verde toscana ai banchi del lampredotto la servano raramente. Dentro ci mettiamo oltre al prezzemolo, l'uovo sodo, l'acciuga e i capperi, volendo anche la mollica di pane secca.
E poi la ciccia... i fegatini di pollo... il fegato di vitello... il fegato di coniglio... il lesso...
Senza dimenticare il vino.

Italian beef in Chicago isn't made with stomach, but roast beef. We dip them too, but often put giardiniera (hot or mild) on top, or sauteed sweet or hot peppers.
Once I was in Siena for work and, since the company was paying, I allowed myself a dinner as follows:
- appetizer of bruschetta and salumi
- First course Pici all'aglione
- Fiorentina 1,5 Kg
- Side dish of chicory
- Coffee, coffee killer
- Cantuccini with Vin Santo
Then I rolled down the road to the hotel ....😂😂
Less famous? No way! The Bistecca is THE reason I visited Florence! Truly a work of culinary art❤ this was the most exciting episode of Pasta Grammar for me!
I love Florence. I’ve been blessed enough to spend three months there, on two different trips. It is my favorite city in the world.

Perseus - I know it well. Excellent choice. It is also close to perhaps the best gelateria in Florence - Badiani in Viale dei Mille. Also outside the usual tourist zone. It is famous for its Buontalenti which is totally sublime. For Easter Sunday we had a family BBQ in Como with fiorentine brought back from a butcher in Tuscany which dates back to before the French Revolution of 1789. Cooking la fiorentina needs to respect a number of rules - it must be the Chianina breed, it must be hung for at least 28/30 days, and you must follow the rule of 4. The rule of 4 is that you start cooking with the steak upright so that the heat transfers through the bone beginning to break down the fat inside the meat, then one side and then the other followed by a similar time resting.The cooking time varies according to the thickness of the steak which could be anything between 5 to 9 minutes. Our steaks were pretty thick and needed 7 minutes for each position. The end result was absolute perfection. Finally, in Florence they never ask you how you want the steak cooked - rare, medium, well done or whatever. For them there is only one way.
Love this rule of 4, it makes so much sense! I will try the next time I have steak, thank you.

I agree! Firenze is an absolute must-go when visiting Italy for the art alone, but then when you get to the food, particularly the meat, there’s no other place like it! And a little FYI Harper, almost all of the finest luxury leather goods in the world including, Chanel, Louis Vuitton, Gucci, Fendi, etc…are made in and around Firenze. 😉😄

My wife and I went to Firenze on our honeymoon and 3 times on anniversaries after, but have not been able to go back for 10 years, so thank you for this video. It’s just nice to see the market and the leather stalls and know that it’s still the same. Also, AC2 is even more fun playing AFTER you’ve gone.
I agree. It was nice to reminisce. When I was there, they had a band playing and a lot of good food.

This Italian beef was not as I suspected. My favorite Italian Beef Sandwich is made in Chicago! Soaked in Au 'Ju' and Sweet fried green peppers on a French roll! So good! 👍❤️
Bari Beef is an Italian beef producer in South Elgin. They sell the very best Italian beef in the US. Not like in Florence, I’m sure, but it’s pretty amazing.

OLD COWS: did you know it's legal to sell old, 10-14 year old beef (aged on the hoof) in Europe but not in the US. Old cows are prone to BSE or Mad Cow Disease so America bans it. In France the slaughter of a 14-year-old cow is treasured because of the rich, fat-marbled meat with better flavor. Some claim it's vastly better than Japanese Kobe or Wagu as the marbling takes place over many years.

Hi guys! You were in my town! I really hope you enjoyed Florence. You choose the right places around for eating. Very good choice is Perseus, I go there for a real fiorentina. And yes, everything you saw in town was made after Assassin's Creed. Brunelleschi, Botticelli, Giotto and Michelangelo are just fake. The true history is that we built the town some years ago to earn money from the success of Assassin's Creed. All is false, except for the fiorentina, of course!

Perseus è tutto fuorché la trattoria migliore di Firenze, te lo dico da Fiorentino. Ci sono posti decisamente migliori dove mangiare la Fiorentina.
Per me il migliore è la Braceria, a Scandicci, a 15 minuti dal centro di Firenze.
Florence always reminds me of the military period, I spent 3 months there, it was beautiful.
Curiosity: the origin of the Florentine steak is English. In 1800, the Chianina cow was just a working cow. An Englishman asked for a steak. First it was boiled (cut from a 6-8 year old cow!) And then roasted. Now we use cows of 15-18 months (the castrated male is the best, rich in fat), aged for a minimum of 40 days.

I got to go to Europe once. Italy was my favorite country. I usually eat vegetarian but I wanted to experience all the Italian dishes I could so when in Rome I had a steak. It was absolutely amazing, incredible and I have raved about it ever since. I came to find out there is a breed of cattle that is so different from American beef. I can’t believe more people don’t rave about it. Twice as good as any American steak I have ever had. And the bread sooo much better, crunchy crust and better taste.
Florence is beautiful. The food is amazing, but if you're travelling for food, go to Bologna. Its only 30 mins from Florence and the food is next level and cheaper.

I wouldn't say next level. It's great Kim Bologna as it is in Tuscany or Piedmont or Naples for that matter, Italy has many capitals
10 out of 10 to Harper for the reference to Assassin's Creed 2! As you can tell from my account image, I'm a big fan too 😉 (but, being italian, I visited the featured cities before playing the game).
And since you are in Tuscany, Ezio's hometown Monteriggioni is less than 60 km away from Florence and became a tourist destination for AC fans, even if it's quite different from the fictional version. San Gimignano is even closer and it's more similar and spectacular. I bet that Eva would like to pay a visit too... in San Gimignano at least.

I have to agree about the steak. I wasn't in Florence but I was in Tuscany. it was a small " hole in the wall" restaurant we had the steak, it was the best I have ever had. It melted in your mouth.
It was so lovely to see you with your lampredotto sandwich. This one of my favorite memories from when I first visited Firenze. When I was 15 in 1971 I came to Firenze for a few days. I was wandering around on my own all morning and became very hungry. I was fascinated by some of the food stalls and ordered a sandwich. I had no idea what was in it - it just looked good. From that day on I have loved lampredotto/tripe - it was so delicious!!!
Beeefff!!!!! My tummy is growling cow stomach in broth sourdough bun salsa and pepper. Oh this goes well with red wine the darker and sweeter the better. Mouth is watering I'm going to cry.

Per your recommendation, I went to the sandwich shop last week. The lady was super nice and the sandwich/sauce was delicious. Honestly, the lampredotto was not my favorite texture, but it was still very good. I will be sure to come back to you for recommendations next time I head back to Italy.
Ooooooo I love Florence. I went back in '07. I got my leather jacket from this little leather shop there who makes leather stuff for the royalty. The jacket was damn expensive but I still have it and love and will prob never return so it was worth it. And I remember rubbing the nose of thay statue. Lol. That was funny and it has gotten even shiner since back then. 😀 this is bringing back soooo many memories.

Florence is a wonderful city, I had the time of my life there just before Covid, at Christmas 2019, and even as a tourist you can eat super well, specially bistecca a la Fiorentina ! in other big cities, like in Venise, it is more difficult or more expensive, if you don't have some good advices

As an Italian who moved to Tuscany, this is heartwarming 💙 it is handsdown my favourite region, and I'll always suggest visiting it outside of the best known touristic places (Florence is one of the most beautiful cities in my opinion, but then there is so much more. And locals in Tuscany are unique people)
