  • On a lovely summer evening, a cool breeze was blowing in through the open kitchen window. Faraz and I were sitting together, smiling and wondering what we could make with the fresh eggplants we just bought. Eggplants have always been more than just a simple veggie for us; they've been like an old friend that finds its place in every dish. From Mirza Ghasemi to the new recipes we've discovered ourselves.
    I love to bring fresh life to eggplants in the kitchen with love and creativity. Every time I start cooking a new dish, it feels like I'm writing a new story in our lives. Today, just like always, the eggplant was the hero of this story. 🍆✨
    To make this delicious dish, we start by peeling the eggplants and cutting them into our desired shape. After salting them a bit, we let them sit to remove their bitterness. Then, we carefully and lovingly fry the eggplants in oil until they're golden and soft. The aroma of fried eggplant wafting through the house is an invitation to summer delights.
    Once the eggplants are ready, it's time for the meat. We sauté the meat with chopped onions and a little turmeric, letting it cook slowly until it's tender. While the meat is cooking, we prepare the sour unripe grapes that will add a special tang to the dish. We chop up some tomatoes and add them, along with tomato paste, to the meat to create a rich and tasty sauce.
    When everything is ready, we layer the fried eggplants on top of the meat and sauce to blend the flavors well. We let it all simmer on low heat for a few minutes so the flavors can meld together. By adding special spices like black pepper, a bit of cinnamon, and saffron, we elevate this delicious dish to its ultimate flavor and aroma.
    Finally, we can serve the dish with rice or fresh bread, and each bite offers us a delightful experience of taste and enjoyment.
    Shirazi salad is an amazing side dish for Persian meals that refreshes the whole table with its vibrant flavor and aroma. To make it, we finely chop cucumber, tomato, and onion, adding salt, dried mint, and dried rose petals to give it an incredible scent. Finally, we add a few drops of lemon juice for a tangy and pleasant taste. This simple and fragrant mix is a light and delicious complement to main dishes, bringing freshness and liveliness to every bite.
