As another non-Ethiopian who loves the cuisine and cooks it for myself at home, this is really cool! Hopefully I can impart some extra knowledge: For Doro Wot, I would use more onions relative to the amount of chicken, and use more berbere and cook them longer. It should be a much brighter red from the berbere. The 'cabbage dish' goes by a few names: 'tikil gomen' literally means cabbage, 'atkilt wot' is a more proper name for the dish. 'Alicha' isn't really a dish, it's the flavor profile of the particular spicing used in this dish, heavy on the turmeric. If you can find a 'mekelesha' or 'mekelesha kimem" (kimem/qimem is 'spice blend'), sprinkle some on towards the end; it's a spice blend using korerima (ethiopian cardamom), it imparts an aromatic fragrance.
