Very simply, Xiang Qi is depicting an actual war between the Chu (Red) and Zhao (Black) nation, Chu is more technologically advanced so they use characters like 炮 with gun powder while Zhao uses characters like 砲 with stone catapults. I wonder why are the words different for each team's pieces unlike shogi where they just add a small line representing the enemy.
