Being Cajun in Southwest Louisiana, most times we had pot roast that was cooked in a Dutch oven on top of the stove as well as the gravy. Mom would always cut slits all over the roast & stuff garlic, onion, & bel pepper in there. I learned by one of the best: Mom.
You seriously can’t beat cajun or SC Gullah cooking! I was also taught cajun by my nanny growing up and my grandmother taught me country soul food and Gullah cooking. Most people who used to eat with us would always be like “Wow! This is so spicy! So delicious! I’m burning up, but I can’t stop eating it! Then grandma would break out the homemade peach ice cream in a small cone to ease all their pain. 😂😂😂😂😂 I love southern food and miss my grandma and nanny badly.

This looks so delicious. I raised nine children. Pot roast and pork roast were among my favorite meals to make for them. Anyone who doesn’t think a well prepared, delicious roast isn’t a gourmet level epic food is a cheffy chef tool.

When I was younger & all our relatives lived closer we'd all gather at my grandma's & have a big pitch in dinner. We'd all bring a dish or two & grandma baked a large ham & made homemade rolls. After my grandmother passed away in '05 & my aunts & uncles moved away over the next few years for work & marriage it became just me, my wife & our 3 kids going to my moms on Christmas day. So my mother started a tradition by making a pot roast in a crackpot w/the usual potatoes & carrots & my grandma's homemade roll recipe. Now each year my kids look forward to that Christmas pot roast dinner at their grandma's 🎅🤶 🎄🎄

I'll break - because you're such a fantastic chef - my mom's recipe called for Top or Bottom Round, searing all sides, then potatoes and carrots and letting it cook stovetop in Sacramento Tomato Juice. Of course broth and keeping the liquid from evaporating. And of course because I grew up on this it's a killer 💯‼️

This was an exquisite preparation of a pot roast. I like to make a nice gravy too, but sometimes I like to make a pot roast stew with little red potatoes, carrot, and celery.
I Just love how she cooked the roast all the way and didn't just fried the outer layer and left the whole inside raw....Its so rare to see this...the feast is so heavenly to look at..

And moreover, they don’t need to be prepared with frills to be classy. “Fancy” is just an aesthetic projected onto food, because most recipes share the same basic ingredients - sure, this one has mushroom powder, and shallots instead of onions, but pot roast is always pot roast.
I love watching your food channel! Can you tell me when you use shallots instead of onions? I know shallots are milder, and many cooks interchange with onions so just looking for your take on reasons for choosing one over the other. (Often for me it’s just a matter of what I have on hand)👍

I see pot roast as a special occasion meal. Anything that takes a significant amount of time (more than 1 hour of combined prep and cook time) is a luxury to me. I never ate it frequently enough to consider it a cozy, comfort meal

Love that you seasoned a day in advance and refrigerated it uncovered - simple way to improve the flavor and texture of meats by like 2x! I only worry about your enamel pot with the metal utensils - I generally stick to wood on mine out of fear of chipping it…
