    Congratulations as you enter this new season of life. When my husband passed away during covid you helped me navigate my new season. First I bought a dehydrator and kept it going almost constantly for months. Next was a waterbath canner, and now I asked Santa for a Carey pressure canner. I'm so excited to start on projects in the new year. Thanks for all you and Jim do for us all.

      So sorry about your hubby. I also started dehydrating during the pandemic, then got the electric canner Pam recommended for pints which is amazing. I’m pretty sure Santa (also known as Mom) got me the Presto electric canner that will do quarts. I’m thrilled. I wish you health and peace in the new year.

      I have the Carey pressure canner and I absolutely love it. I pressure canned water, actually distilled water to get the hang of it. There is a youtube video on it sponsored by Nesco (they bought the Carey name). And I used the guidelines for sterilizing distilled water from the National Center for Food Preservation. I thought it would be good to have some pints of sterile water for emergencies. And it gave me the confidence to actually can food. Good luck.

      Very sorry for your loss. I am sure it is hard, especially during the Christmas Season. I too bought the Carey Canner. I have used it about 10 times. I love it!!! I have a glass top stove, so I was always nervous using my Presto Canner on it for 90 minutes with all of that weight. I love the Carey and was happy to see Pam use it (Clone) during her video.!!

      @@firequeen2194 I have a Presto quarts pressure canner and I can do pint jars too. You'll have to purchase a rank to do pints. I love my Presto.

    Congratulations Pam! I just gave my sons girlfriend a tour of our basement pantry. When I showed her the canned ground beef she said she didn't know you could do that. I had to explain to her the difference between water bath canning and pressure canning. I'm sure it was an eye opening experience for her. These City girls that have never canned before, WOW! She is not stupid, she's a school teacher but, she's a music teacher that used to be in my son's band. I'm hoping educate her if she wants to learn.

      I just showed my daughter-in-law our cold room full of food storage. She really lit up as she saw all the goods stored there. I gave her the 2 minute tour of categories and she smiled from ear to ear. She said they would come here if anything bad happened, and she really wants to learn to can. We’ve been here for 3 years and this was her first visit (they lived in Alaska until a couple of months ago).Now that we are in the same state I hope to be able to teach her to can, by the book.

    Hi! Just wanted to drop a note letting you know I love your videos. I come here to recheck before I start a new project just to refreshen my memory. I love canning, it's not just saving money and food, but also because I have such fond memories canning with my mother and grandmother. It is something I have been blessed to pass on to my daughters. My oldest purchased an electric pressure canner since the house they purchased already had a new glass top stove. She loves it!

    Canned beef is so awesome! We are currently in Southern Texas escaping the cold in Wisconsin. First year snowbirds. I brought a case of canned beef along. I was a little worried about the jars rattling and breaking, so I used socks with holes as jar cozies. Worked great! So easy to make a meal in camper with canned meat.

      We will be doing the same...leaving MN soon with our camper and working our way to southern Texas from Florida. I am planning to take my canned goods along. I am going to have cardboard between the jars as I am worried about them rattling & breaking. I like your sock idea!

    I love ground hamburger canned up. It doesn’t taste any different to me one bit. I add onions (if I didn’t can it up) and nobody knows the difference. It’s wonderful. I canned up every bit of meat, poultry & veggies in my home yesterday. It was an entire day…7am to 8:30pm when I put the last dish away. Whew, it was a job, but a relief to know if I loose power, I don’t have to worry about that.

    I just had a Duh moment- thank you. The first batch of hamburger I canned was so bland that even mixed in other foods it was bland. The next batch canned has onions, peppers, garlic, salt in it. Better, but still a little bland. Now I see you using not plain water in the cans. I think that will solve the problem of bland. Thank you!

    After researching online and watching your videos I chose a Nesco/Carey canner and it has been wonderful. Shelf stable proteins are the number one thing I preserve.

      Kym I just purchased a Nesco elec canner and have used it twice after the 10 min steaming and move the weight to seal it continues to vent out the entire time. Does yours do this one is mine a lemon?

    A year later, I rewatched your video, and used my Presto electric canner for the first time. I just finished 7 pints of ground beef. So exciting and not hard at all. Can't wait to start on more food prep. Thanks again for your awesome videos.

    I canned the meat from three deer this hunting season. One canner load I did chunks, and the rest was all ground meat. You can't beat it!

    I canned hamburger meat using my new Nesco canner and instructions from your previous videos. I love it! Makes meals so simple! 😋 I add onion to mine since I add onion to everything...Going to make more adding bell pepper with the onion. This is a life and time saver. And it frees up my freezer. AWESOME! Thank you Pam and Jim for all you do! 😍

    I retired January 8 this year, and I love it! Those who said I’d be bored were wrong for sure. Started sewing a little and canned for the first time. Both water bath and pressure 😊 since I love to cook/bake, it was a natural progression. Thank YOU for teaching me so much. I truly hope you enjoy your retirement to the fullest.

    Canning meat is so economical when pairing canning with a good sale. Ground chuck was on sale for $2.49 lb. That is the only time I buy it. I buy as much as I can afford come home and can it up. Be patient, everything goes on sale at some point. This video shows how easy it is. Thanks Pam!

    Congratulations! Sleeping late, what joy! What is even better is when you don't need to sleep late anymore. I don't use an alarm clock, but I still wake up around 7 each morning. In the summer, when the sun rises earlier, I wake earlier. In the winter, as now, I feel so deliciously wicked when I sleep until 7:30!

    I feel truly blessed I'm 83 and have been canning, dehydrating buying flour,sugar and so much more. I absolutely love the canned meat especially chicken but corned beef, hamburger and chicken, can be used in so many recipes. Love your videos keep up the good videos

    We've been grinding our own beef and canning that. It's often cheaper, the meat is leaner, and we like the texture better. The meat grinder for our KitchenAid 600 Pro works just fine for this and doesn't cost a lot. Recommended.
    Our local store had whole sirloin tip roasts for $4.09/lb last week while regular ground beef (75%) was $4.19. Easy choice there!

    I think it’s perfect for sloppy Joe’s as well. I use the IP Max and I’m pretty sure Santa is bringing me the Nesco for Christmas. I use the Max religiously for pints (love it!) and am looking forward to being able to do quarts. This has been imperative for me as I purchase the ground beef when there is a $1.99/2.99 sale per pound. I’m out of freezer space so being able to can it so I can preserve is awesome. Another excellent video, I can’t tell you how much I appreciate you, I’ve learned so much!

      Same here. I kept hearing people saying it was unsafe and unapproved. Until her video, I didn't realize they don't approve any brand of stove top canner either. The safety tests Pam did on the Nesco made me feel completely confident in using it. I have a stovetop canner, but my daughter, 2 year old granddaughter live together. When my daughter is at work, I am not able to sit and constantly monitor my stovetop canner. The Nesco has been a lifesaver and has eliminated a lot of my very late night canning sessions!

I am just starting this video and have to respond to you saying you have ideas to how to make your channel more useful - I’m not sure that’s possible as you are my go-to for just about anything in the kitchen or storing. THANK YOU! I am excited to learn about the hamburger as I don’t care for it either (I haven’t compared it to dog food). So, I’m watching while canning chicken soup on this blustery day.     I flavored my canned hamburger with Cajun seasonings, sloppy Joe seasonings, chili seasonings, Italian seasonings , BBQ seasonings . Then I add this to my recipes. I have many canned jars separated by flavor. These are great. I might add onion , Tom’s, sauce , or green peppers to the taco flavored hamb to fix up my meal. It so useful to add other ingreds to the hamb.

    I just recently started canning and the gravy and fat separator pitcher worked wonderfully to reduce fat! Plus, much easier to pour out of the pitcher into canning jars.

    We need a video about convenience foods that you store please - grid up and grid down. Pre-making bread stuffs, canned soups, etc. I’m starting to make my from scratch meals into pre-made but still healthy convenience foods. I can’t always mill my own grain freshly and bake bread or pizza dough or crescent rolls or whatever (like if I’m sick or I don’t have sufficient time). Thanks so much for doing this video. This is going to give me the confidence to try my first pressure canning projects!

    I add 1/4 teasp baking soda and a bit of pepper. to canned burger and it neutralizes that dog food taste

    You commented in this video about not knowing the cost of something you canned a year ago. I was watching another channel and the person canning writes the price/cost of what she cans on the lid so she can compare price changes. Thought that was a great idea.

    I asked the question in one of my Facebook groups about the off-putting smell we seem to have from all our canned meat. To us, it smells just like dog or cat food. This is true whether its beef, chicken, pork or any kind. Feedback was that others agreed, experiencing the same. However, we all agreed that once we cook it into our recipe, that off putting smell goes away and doesn’t really transfer to taste. I just wonder why nobody ever mentions this. I’m sure if this was mentioned, more people would continue to canning meats as a wonderful convenience. Congratulations on retirement!! Yay!!🎉🎉🎉🎉

      I had that reaction especially with chicken (what some channels call "ugly chicken"). It was awful, and like you describe had a pet food odor and taste. I didn't try to do anything with it, but I also didn't throw it away. I'll try adding it to a basic dish and see if I can use it. I canned hamburger over a year ago and need to give it a taste test again. I did stew meat in spicy broth and that was a lot better tasting.

      I brown all meats that I pressure can. I don't smell any nasty odors. Try browning before placing into your pressure canner.

    I have canned hamburger cooked and raw packed I prefer raw pack . I was never happy with the taste so I now freeze dry all hamburger cooked and raw so happy it is just like fresh when rehydrated never been happier.

    Congratulations on your retirement! My hubby and I are now both officially retired and loving it. The only trouble is that there just isn't enough time in each day to do all we want to do. My retirement gift to myself was the Presto 23-Qt model like your's (but with an induction bottom). My first pressure canner this last summer was the Carey, bought on your recommendation because the presto looked so intimidating and scary. But now I LOVE it! (Still love the Carey too but the Presto does so so many jars.) Today, I had both of them on the go canning potatoes. I just can't stop canning! You've created a monster with an ever-growing "cantry". (A very safe, reliable cantry!) Thank you for all you do.

    This video is so valuable to show newer canners that the only difference in pressure canning between a stove top canner and the electric canners is the procedures to follow in setting up the canner. I see so many comments in online forums by new canners lamenting that "my canner didn't come with a recipe book", when they can actually use ANY SAFE tested recipe. 2 SMALL CORRECTIONS, though: At 12:02 you say Nesco prefers us to use regular mouth jars, but in the manual the only mention of jar size is under Water Bath canning (p. 9) and it seems to be referencing the fact that regular mouth jars are taller than wide mouth jars, so wide mouth is preferred. On the Instant Pot Max you said at 13:50 to fill water halfway up the jars, and the IP instructions actually call for filling one quarter of the way up the jars. Sorry to nitpick, but I have both canners and your comments had me doubting my canning habits. I checked both manuals. Thank you so much for the wonderful education you provide!     In Quebec we eat the Shepherd Pie (ground beef, corn cream and mashed potatoes) .Sunday, my granddaughter want to eat that recipe for supper and it was 4:30 pm!! I took a jar +à an of Ron and I'd just to make the potatoes!! Voilà! She had her supper done fast + ketchup! I love my canning! Thanks to you Pam.

    Congratulations on your retirement!1 I retired a couple years ago, due to an cancer diagnosis, I wanted to enjoy my life.     Thank you for another thorough, informative video. Great idea to compare canning in all three types. A couple of questions…what do you recommend as the best ratio of fat content…80/20, 85/15…or does it matter? And what is the shelf life? I wish you every happiness in your retirement. From the smile on your face and the excitement in your voice, it’s obvious that it was the right decision! 😊

      Brenda millican: Shelf life is when it's sealed.U tap lid the flat,with a spoon,U lift up with flat,& it stays sealed U use a church key,& open,Smell it,Make sure it's okay,Cook it.Remove Rim,& wash & reuse.I just opened salsa from 2019. Still good,Smell good,taste good,and lid sealed. Hope this. Helps

    My Nesco should be arriving today and I'm so excited! I have hamburger and pork to use in my first canner loads. Thanks for all your wonderful videos, especially the one on the science behind the Nesco/Carey electric canner. I am only preparing food for myself so I really don't always need my big stovetop canner.

    I Love my Nesco electric pressure canner!! I bought it through your link in the spring. There was a learning curve, because I'd never pressure canned until this year. Thanks to your excellent videos, I was able to learn. Over Thanksgiving weekend I canned 10 quarts of beef bone broth and 2 quarts of turkey broth. I think I'll cook 2 turkeys one for Christmas dinner and one for just the meat and bones. More canning adventures ahead!

    Thank you! After watching a few of your previous videos I bought a Carey caner, I LOVE it. I am a twice retired fellow who may retire again some day now that I'd rather can than go to the office. I've done burger and sausage also beef, chicken and pork cubes, chili, soups and anything else that is safe to can. We raised 9 children so neither of us are able to cook for two. Many times we would eat the same food for 4 or 5 days rather than waste it but NOW thanks to you and Jim we can or freeze dry most of our leftovers it is amazing! Thank you, Thank you. My wife is a long career teacher and we love the way you teach from your heart. Have I thanked you? God bless you both. Merry Christmas

    The busiest time of our lives...retirement! I used to work at a quilt store and chat with the ladies. Every retired lady that was in there said she was busier in her retirement that when she was "working"(out of home). Enjoy your retirement!

    Congrats on your new endeavors. I just really want to thank you for introducing me to the Nesco. I finally felt safe to can meat and meat broth. I now have two and our favorite is chicken breast. It makes the best sandwiches!

    I add it to rice dishes and chili and everything. I’m so happy I have a bunch because I have barely any freezer space. Locking in the previous prices is a godsend.

    Congratulations on your first day of retirement. It was hard for the first 6 months for me but I found things to do and it got better. Quilting, canning and gardening are my hobbies. Just keep busy.
