I really miss Miss Phyllis. As odd as it is...I cry every day knowing one more sister in Christ is no longer here for me to connect with - kindred spirits in the kitchen and in faith. You’d think tears would dry up, but no. I hated that you suffered so, which is the only reason I bear my loss and rejoice your victory. Such a good and faithful servant were you.. My mom used to make the best chicken and dumplings. She'd do it a lot like you Phyllis except she'd drop bisquick as dumplings but omg they'd get so fluffy. I am going to follow yours since it's so much like my moms. She passed in 1996 to cancer and prayed and believed in her healing after the chemo wouldn't work and she was in her bible 24/7 but unfortunately she passed I miss her everyday but watching your videos reminds me a lot of my mom. She was a interior decorator and could sew anything. I know you also were a successful woman and now you are retired but same strong yet very feminine presence as my mom. you remind me of my grandmother so much. she taught me how to cook southern food like this from scratch just like you do! now in my mid twenties, I feel I have lost my way to convenience food and a busy work schedule. your videos bring me right back to my roots and its beyond comforting. For as long as I’ve been a wife (32 yrs), I’ve *never* been able to make good chicken & dumplins. I either make lumpy chicken plaster, or chicken & chewy gravy. The last time I had chicken and dumplings was about 15 years before my mother passed and she has been gone for 12, so going on 30 years. I'm sappy, but this video made me cry remembering how much I loved those dumplings and my mother. Thank you for sharing and thank you even more for the memories that came with it. XOXOXOX

Mother Phyllis, I made this For Dinner Tomorrow, I'm waiting to cool the Pot off and Put it in Fridge. It sure did come out Great. Since the Chickens are much better then they were 2 years ago its a Blessing to make these dishes again, I was Raised on a Farm and we never Bought Meat or Milk. Veggies we planted but not always had everything so we still bought some. My Mother Really wasn't a Perfect Bread Baker as You are, I'm sure you guessed that by now :) But Since Jesus sent me a 2nd Mother to teach me things mine couldn't as she was very sick when I came along, I was like a 2nd Family my age is disant from my other Siblings and I have lost 4 siblings, I have 3 left. Well, Hello erbouie, in Cleveland, Ohio, Thank you for commenting and cooking those chicken and dumplings. We have three Poodle Guard Dogs that help protect everything in the frig. When the frig is opened they all come running so I know what's happening. It's great when a subscriber mentions the city where they live, it makes all this so exciting to know people all over the world watch on TH-cam. Hello Phyllis from Roanoke Virginia. I made my first batch of chicken and dumplings when I was 13 years old. They weren't the best but they were edible. That was almost 46 years ago and I haven't stopped making them since. I've even made them at restaurants where I've worked for the daily lunch special. I'm not bragging but my dumplings always got raves which made me feel really good, but I was never totally happy with them and was always looking for new ways to make them. Lord knows I've tried numerous different ways but always went back to my own recipe as I didn't like the others. I ran across yours some time ago and I tried them, I am *so glad* that I did. They were without a doubt the best dumplings I've eaten in my life. Thank you *SO* much for posting this recipe. =)

Hi Phyllis , You are a wonderful cook, and I love your video's. I will be making your chicken and dumpling recipe this Saturday, so my family and I can enjoy it for a few meals. It looks divine! I always add fresh lemon juice and some freshly grated lemon zest from that lemon into my chicken broth, as that really adds a very fresh burst of goodness and citrus sunshine flavor, and if you have a chest cold or flu, or stomach virus the lemon really helps with chest congestion discomfort when you add it to chicken soup. I also place a lemon in the garbage disposal, but it is great to place in the microwave to clean it, and this is what I do: The process here just requires a lemon, a microwave-safe bowl, and a dry towel: Pour water in the bowl: Measure about a half cup of water into the bowl. Squeeze the lemon: Slice the lemon in half and squeeze the juice into the water. Drop the lemon halves into the bowl. Microwave for 3 minutes: Place the bowl in the microwave. Microwave on high power for 3 minutes so the liquid comes to a boil. Let stand for 5 minutes: Do not open the microwave door. The steam trapped inside will help loosen food gunk. Wipe the microwave clean: Open the door and carefully remove the bowl with the lemons. If your microwave has a turntable, lift it out and wipe it clean. Wipe the inside of the microwave clean starting with the ceiling and the sides. Finish with the floor, sweeping any crumbs into your hand. Don't forget the door! Cleaning stubborn spots: If you come across stubborn spots that won't easily wipe away, dip the corner of your dish towel in the lemon-water and scrub until the spot comes away. "I am all for making a woman's job a bit easier if I can". They say that aging is an honor since many unfortunately never reach their golden years and die young, so never apologize if you forget something.....after all we are not designed to be perfect, we are just humble humans. Damn, I miss her- and I never knew her. There was nothing contrived about her vlogs; some of these "home cooks" still try too hard on their vlogs. The cooking was simple, what I ate all my life. And her voice was so soothing, it was a pleasure, Phyllis. A true pleasure.
Thanks for the comment, Dennis. Every time I do a video that contains chicken it will be Fieldale chicken for sure. We love it. I don't know if I mentioned this in my videos but we had gone for many years without eating chicken because it taste like wet chicken feathers smell. I just hated it until I tried the Fieldale now we're eating chicken on a regular basis. Thank you Dennis and thank you Fieldale.

Everyone was so complimentary, asking for my recipe, so I linked your video to my post. ☺️ I hope your video inspired them to make it for their families. My mother always used the canned biscuits, which I'm not a fan of, so thank you for your recipe, it really was delicious. Edit: I do not have a pressure cooker, I opted to use my crock pot, and stated in my post that you could use any large pot, pressure cooker or crock pot, whatever you have.
If I'd ever have to chose a last meal it would be chicken and dumplings. This looks amazing. I've not heard of using buttermilk for the dumplings. Thank you!!!

Phyllis Stokes I know it's been a long time sense you made this video but I just found it so I am making it for dinner tonight so I hope I get a answer before I do but if not I'll just do it anyway, the question I have is you kept stressing to make sure the dumplings were well coated in the flour WHY is that so important? I'm watching y'all from St. Albans WV about 10 miles from Charleston and I love your videos just keep em coming!!!
They have to be coated with flour so the dumplings won't stick together when they first get put in the pot to cook. Dumpling dough is notorious for sticking together when it cooks. The flour will also help to thicken up the broth as the dumplings cook.
Living up here in the mountains, Snow, Ice, whatever comes our way, I have learned to use dehydrated things like celery, onions, garlic, mushrooms etc. They are nice to have on hand, especially when the blizzards are coming in. with my gas stove, I can still whip up some nice stews, chili, whatever we are in the mood for. Amazon sells them, and for us, this is a must. Your recipe looks so delicious

I love your videos and of course we’ll bear with you. My mom was born and raised in North Carolina and she rolled out her dumplings as did my grandmother. It consisted of flour, chicken broth and roll them. Yours look delicious and I am anxious to try your recipe.
Well I made the dumplings with a tbs of crisco and a tbs of coconut oil. Love the flavor of buttermilk in em also. The idea of rolling into little balls is wonderful btw.

Hi Phyllis, I love your videos and recipes :-) I have gathered that you are somewhat health conscious so I wanted to share something with you. Do you remember when it was all popular to use margarine instead of butter and decaffeinated coffee instead of regular because it was "healthier" for us?.....and then come to find out that the chemicals in those things were way worse than the natural things they were replacing....well the same is true with Crisco vs. lard. I think you would find it interesting to look it up to verify for yourself. I look to my grandpa who never had Crisco decaf or margarine a day in his life and lived to 93....oh and he ate those cholesterol loaded eggs every morning also lol. My 77 year old mother just read her Crisco label and wondered when they switched to soy. We'll be going to lard and we switched to grass fed butter (Kerrygold) and what a difference in taste.

Dear Phyliss, The other weekend I started making a pot of chicken and dumplings, I just wasn't feeling well. and I tried dumping a package of gnocchi, it was so good.I cooked them on simmer for about 20 minutes, even though they say to cook them for 4 minutes. Will be maling these again.

No, they do not carry this kind of chicken in Walmart in my area. I get the Fieldale chicken at my local BI-LO. Fieldale chicken is located in Georgia. You could probably Google the name and find out where they distribute, I know they are a very large company. Thanks for the comment.
That is a perfect little dumpling on the inside! I make chicken and dumplings pretty much the same way except i just drop them by the spoonful. I will try making the little balls next time. I love them fresh out of the pot but always make enough for left overs.

Hey Phyllis I just wanted to say I really enjoy your cooking segments and have saved many of them on TH-cam to cook later. I also kind of wanted to give some advice if you are willing to take it and that is that I believe your preparedness is not is prepared as it could be and by that I mean that I just feel like all of your ingredients should be sitting out on the counter ready instead of having to go to the refrigerator, look in the shells or underneath the cabinets because things like that take up a whole lot of time on the video making them longer than they should be. I hope you take that in the good spirit in which it was meant and thank you again for your hard work and effort. Keep up the good work.

Great tips from the video: 1) Add just a hair more baking powder to White Lily, even though it's self-rising. You want a lighter dumpling that'll soak up the broth overnight instead of a gummy mess. 2) When you add the dumplings to your broth, put your cooked chicken in FIRST. That way, the dumplings will cook atop the chicken and not sink to the bottom, becoming soggy. 3) Feel free to add a little more flour and milk if you'd like a more "gravy-like" appeal in the taste of the broth. (Oh, but I do!) 4) Don't freak if you sauce looks a little runny. Given all the flour in the mix and the cooling process (combined with the time of letting it sit overnight), it'll thicken up right nice. 5) Phyllis' husband likes his with red pepper. (THAT'S INSANE! So insane, ma'am, that I just might try a bowl in that style.) Hi, Mrs. Stokes! Georgia girl living in Denver. (I don't wash my chicken. Ever. That's just absurd.) But I needed a taste of home and just kinda wanted to see other versions of drop dumplings and I'm about to make yours! Thanks for the video. I'll bet it's amazing. PS: You have the killer forearms of a woman who works with flour from scratch! Way to go, Mrs. Stokes!

I will be making your chicken and dumpling recipe this Saturday, so my family and I can enjoy it for a few meals. It looks divine!
I always add fresh lemon juice and some freshly grated lemon zest from that lemon into my chicken broth, as that really adds a very fresh burst of goodness and citrus sunshine flavor, and if you have a chest cold or flu, or stomach virus the lemon really helps with chest congestion discomfort when you add it to chicken soup.
I also place a lemon in the garbage disposal, but it is great to place in the microwave to clean it, and this is what I do:
The process here just requires a lemon, a microwave-safe bowl, and a dry towel:
Pour water in the bowl: Measure about a half cup of water into the bowl.
Squeeze the lemon: Slice the lemon in half and squeeze the juice into the water. Drop the lemon halves into the bowl.
Microwave for 3 minutes: Place the bowl in the microwave. Microwave on high power for 3 minutes so the liquid comes to a boil.
Let stand for 5 minutes: Do not open the microwave door. The steam trapped inside will help loosen food gunk.
Wipe the microwave clean: Open the door and carefully remove the bowl with the lemons.
If your microwave has a turntable, lift it out and wipe it clean. Wipe the inside of the microwave clean starting with the ceiling and the sides.
Finish with the floor, sweeping any crumbs into your hand. Don't forget the door!
Cleaning stubborn spots: If you come across stubborn spots that won't easily wipe away, dip the corner of your dish towel in the lemon-water and scrub until the spot comes away.

Damn, I miss her- and I never knew her. There was nothing contrived about her vlogs; some of these "home cooks" still try too hard on their vlogs. The cooking was simple, what I ate all my life. And her voice was so soothing, it was a pleasure, Phyllis. A true pleasure.

Thanks for the comment, Dennis. Every time I do a video that contains chicken it will be Fieldale chicken for sure. We love it. I don't know if I mentioned this in my videos but we had gone for many years without eating chicken because it taste like wet chicken feathers smell. Edit: I do not have a pressure cooker, I opted to use my crock pot, and stated in my post that you could use any large pot, pressure cooker or crock pot, whatever you have.

They have to be coated with flour so the dumplings won't stick together when they first get put in the pot to cook. Dumpling dough is notorious for sticking together when it cooks. The flour will also help to thicken up the broth as the dumplings cook.
Living up here in the mountains, Snow, Ice, whatever comes our way, I have learned to use dehydrated things like celery, onions, garlic, mushrooms etc. They are nice to have on hand, especially when the blizzards are coming in. with my gas stove, I can still whip up some nice stews, chili, whatever we are in the mood for. Amazon sells them, and for us, this is a must. Your recipe looks so delicious

Nice to see someone using buttermilk in their dumpling recipe. That's a very old Southern style that my grandmother used to do.
Do you add the three heaping table spoons of flour to 3/4 cup of water or milk? You kept saying water then you'd say milk....which is it?

I like to use a couple can's of cream of chicken soup instead of the water and flour. gives them a wonderful flavor. Love your videos.

I love your videos and of course we’ll bear with you. My mom was born and raised in North Carolina and she rolled out her dumplings as did my grandmother. It consisted of flour, chicken broth and roll them. Yours look delicious and I am anxious to try your recipe.

Well I made the dumplings with a tbs of crisco and a tbs of coconut oil. Love the flavor of buttermilk in em also. The idea of rolling into little balls is wonderful btw.

I love your videos and recipes :-) I have gathered that you are somewhat health conscious so I wanted to share something with you. Do you remember when it was all popular to use margarine instead of butter and decaffeinated coffee instead of regular because it was "healthier" for us?.....and then come to find out that the chemicals in those things were way worse than the natural things they were replacing....well the same is true with Crisco vs. lard. I think you would find it interesting to look it up to verify for yourself. I look to my grandpa who never had Crisco decaf or margarine a day in his life and lived to 93....oh and he ate those cholesterol loaded eggs every morning also lol.

My 77 year old mother just read her Crisco label and wondered when they switched to soy. We'll be going to lard and we switched to grass fed butter (Kerrygold) and what a difference in taste.

Dear Phyliss, The other weekend I started making a pot of chicken and dumplings, I just wasn't feeling well. and I tried dumping a package of gnocchi, it was so good.I cooked them on simmer for about 20 minutes, even though they say to cook them for 4 minutes. Will be maling these again.

I'm having such mixed feelings watching this now after earlier today seeing the video Miss Phyllis's son posted announcing her passing. Seeing her image on the screen like this makes me feel that she could not be gone. She was such a great home maker and her videos have really left an impact with me. No, they do not carry this kind of chicken in Walmart in my area. I get the Fieldale chicken at my local BI-LO. Fieldale chicken is located in Georgia. You could probably Google the name and find out where they distribute, I know they are a very large company. Thanks for the comment.

That is a perfect little dumpling on the inside! I make chicken and dumplings pretty much the same way except i just drop them by the spoonful. I will try making the little balls next time. I love them fresh out of the pot but always make enough for left overs.

Hey Phyllis I just wanted to say I really enjoy your cooking segments and have saved many of them on TH-cam to cook later.
I also kind of wanted to give some advice if you are willing to take it and that is that I believe your preparedness is not is prepared as it could be and by that I mean that I just feel like all of your ingredients should be sitting out on the counter ready instead of having to go to the refrigerator, look in the shells or underneath the cabinets because things like that take up a whole lot of time on the video making them longer than they should be. I hope you take that in the good spirit in which it was meant and thank you again for your hard work and effort. Keep up the good work.

One Grandma made drop dumpling’s, the other rolled German flat dumplings! Each was delicious ❤❤❤❤❤❤❤❤ But, I only remember how to do rolled!

Great tips from the video:
1) Add just a hair more baking powder to White Lily, even though it's self-rising. You want a lighter dumpling that'll soak up the broth overnight instead of a gummy mess.
2) When you add the dumplings to your broth, put your cooked chicken in FIRST. That way, the dumplings will cook atop the chicken and not sink to the bottom, becoming soggy.
3) Feel free to add a little more flour and milk if you'd like a more "gravy-like" appeal in the taste of the broth. (Oh, but I do!)
4) Don't freak if you sauce looks a little runny. Given all the flour in the mix and the cooling process (combined with the time of letting it sit overnight), it'll thicken up right nice.
5) Phyllis' husband likes his with red pepper. (THAT'S INSANE! So insane, ma'am, that I just might try a bowl in that style.)

Put the coffee on, I'm coming over. Thats a good price, for chicken like that. I noticed that chicken just doesn't taste like it did when I was younger, they do something to the meat, taste weird now.
I love mine with peppercorns. I also add a little sprinkle of Dill instead of lemon. But yours looks amazing.
I am glad you mentioned pepper. Grand always added black pepper, so for me it wouldn't be the same without it. I sure wish You could let me have a bowl! Ha Ha!
