Baklava's historical journey, a recipe and a question: is it Turkish or Greek?

  • There might be nothing else that evokes Turkey more than the mention of baklava. Almost every rite of passage in the country is accompanied by this sweet and flakey pastry, be it a birth, a wedding, or any kind of celebration. The multi-layered baklava we know today was developed in the kitchens of Topkapı Palace and was baked after the conquest of Constantinople. While kitchen notebooks with the recipe have been dated to around 1473, the origins of the dessert date much further back. So how far exactly does it go, and how come the Greeks claim this dessert as their own?
    We took a historical and delicious journey to the homeland of baklava, Gaziantep, a city well known for its long gastronomic history and which is listed on UNESCO's Creative Cities Network. We talked with Mr. Koçak, the owner of the most famous baklava stores in Gaziantep, about the history of baklava and discovered that baklava is inextricably linked to the land of Turkey. We learned how to make this delicious treat at home and have learned for sure that baklava is Turkish.
    Ingredients
    · 1 egg
    · 240 ml water
    · 90 ml oil
    · 3 tbsp butter
    · 135 gr yogurt
    · 2 tablespoons vinegar
    · 10 gr baking powder
    · 1 tsp salt
    · 850 gr flour
    · starch for rolling
    For the filling
    · 500 gr pistachios
    For the syrup
    · 850 gr sugar
    · 1.5 liter water
    · A few drops of lemon juice
    Instructions
    1. Before getting started with anything else, it is important to first prepare the syrup. Mix water and sugar and bring it to a boil. Let it simmer for 30 minutes. Turn off the heat and add the lemon juice, give it a stir and let it cool.
    2. Add all the ingredients for the dough into a bowl and knead it until everything is incorporated. Let the dough rest for half an hour and separate it into eight equal parts. Dust your surface with starch and roll the dough out as thinly as possible. Let the rolled out dough rest for another 10-15 minutes. Oil a baking tin of your choice and place sheets of the dough into the tin. Add the crushed pistachios and then place another four layers of dough on top. Now cut the baklava into any shape you want. It is essential to do the cutting before baking. Melt the butter and pour it over the baklava.
    3. Bake at 180 degrees Celsius for about 40 minutes until golden brown. It is important to monitor its progress while baking.
    4. As soon as you remove the baklava from the oven, pour over the syrup and let it soak it in.

      Aleppo is not far from Gaziantep. I have been there before war and ate baklava there, it was like a bad, tasteless copy of Turkish baklava. Also thousands of people from Aleppo were coming to Gaziantep and buying tons of baklava here before war. But some legends say baklava is from Aleppo 😂

    If you as me from Central Asia to Anatolia all Turkic - Altaic people make baklava . So, baklava is Turks dish.
    Baklava and similar Shekerbura, gogal is pretty PAGAN religious dishes.
    Eg. We Azerbaijanis make Baklava for special occasions, Zoroastrian Easter - New Year which indicates symbols of Life.
    Baklava - Star, ⭐️ Gogal - Sun, 🌞 Shekerbura - moon. 🌙
    I hope it explains why Turks from Central Asia to Anatolia makes these delicious pastries.

      I have been in Greece for 10 days in Athens and Thessaloniki, i walked all around these cities. I have not seen even one piece of baklava. In Turkiye you can't walk 200m without seeing baklava. If i make a circle of 200m radius from my house, there are 3 baklava shops.

      Baklava is an Ottoman dessert. The Ottoman language is a mixture of Arabic, Turkish and Persian, so Baklava was a Turkish word in Ottoman times and still is.

      I suggest to find and read the text of Athinaios named Deipnosofistes. In it he quotes the words of Xrysippos Tyaneys where not only he described the ingredients and the actual recipe but also he suggested best places to get the best of the ingredients. This was an ancient recipe as made by the Minoans in Crete.

I ate my grandmothers baklava my mom makes baklava I make baklava we have Seker Bayrami we eat baklava for 3 days every household makes baklava.     As if tensions weren’t hot enough between the two countries🔥I’m not sure this is a great idea! The reality is we are neighbors and too much history being around each other of course the food is also become common. There is a “Greek” way of these dishes and Turkish way.     You are most welcome to visit Bangladesh 🇧🇩 you will find many variation in our cuisine. They're similar spicy like indian cuisines but not everything are same!!! You will be amazed how a simple beef can be cooked in various way in different districts of Bangladesh. Begali foods & desserts are vastly appreciated by others!

      Read Athinaios DinnerSofists or in Greek Deipnosofistes. He has the exact text of an even more ancient writer Xrysippos who located the recipe in ancient Minoan texts and not only names all the ingredients and gives the exact recipe but he also points out the places where the best of the best ingredients can be acquired. Deep in Asia honey was made known after Alexander the Great who had doctors that used it to cover the wounds of his soldiers and heal them. On the contrary in Greece honey was produced and before lunch or dinners they poured a little bit of honey and wine as a small tribute to the gods for the goods they believed helped them to cultivate.

    Greeks have stolen so many dishs/recipes from Turkiye. They normally add a letter i at the end of the name, once they tried to claim ''Lokum’’. They named it ‘’Lokumi’’ but the song from Modonna which contained ''Turkish Delight’’ proved enough. Baklava was discovered and registered by the Ottomans.

    It's silly to claim whether a dish it's from one country or another. And why do you think you have the same gastronomy? Because of the proximity of the territory, history and so on. And baklava has syrian origins, like most of the food in turkish cuisine. And the arabs propably took it from older civilizations, cause that's how human kind works

    Where baklava come from? Modern baklava may have been invented in Turkey during the Ottoman Empire, then modified in Greece. Many Meditteranean countries have their own versions of baklava, slightly tweaking the recipe to make it unique...all history books has proof a turkish dessert not GREEK.. either yoghurt not greek. turkish made up . they stole from us... please if you have brain look search the history ....

    There is no real agriculture in Greece. It never happened. No food or dessert because of this.
