If mama cook it all the time cook it like hers but if it's just a Filipino dish do it with your twist, like use pamesean cheese fresh tomatoes etc. Alot of Asian dishes are not healthy. I love taking some recipes and making them healthier like a challenge to see if I can get it to still taste good but with half the calories!🎉
I don’t know if it’s necessary for Filipino spaghetti, but for Italian dishes with tomato paste, my Italian grandmother taught me to sauté the tomato paste with the veggies . It cooks the tin flavor out of it and makes it sweeter, and you definitely have to finish the pasta in the pan with the sauce instead of just putting it on top. I want to try Filipino spaghetti, I could definitely get down with a sweet spaghetti for a change and this looks delicious!

Benji, is it a cooking technique to not cover the pot of water needed to boil the pasta? I always cover to make the water boil faster and not waste energy as the cover keeps the heat inside the pot. Once the pasta is added creating a starchy water consistency I then keep the pot uncovered.
I just wanted to ask other Filipinos, do you use banana ketchup in your spaghetti? Because at home we don't, we only use the Filipino style spaghetti sauce plus tomato sauce.
Mexican spagetti was made with chorizo in it, never got the recipe but I remember the chorizo taste. My mother used to make it once in a while but I remember eating It at parties as a kid.😊❤

Great video Benji! I add a bit of condensed milk and I add the shredded cheese towards the end of cooking the sauce so it melts and then add a little on top when getting ready to eat it.

That’s not going to be Filipino spaghetti sauce,because you’re adding tomato sauce and tomato paste. If you just sauté garlic 🧄 and onion 🧅 then add the meat 🥩 and the hot dog 🌭, then add the Filipino spaghetti sauce. There’s a lot of version of cooking the Filipino spaghetti sauce. The more simple the more it tastes good than adding other ingredients.
Secret to Filipino spaghetti is banana ketchup… add it to regular spaghetti sauce, tender juicy hotdog… you can play around with the other ingredients. Enjoy!
This is my recipe 2 cups of sweet rice 1 & 1/2 cups of coconut milk, 1/2 cup sugar & 1 tsp salt… cook till liquids have been absorbed by rice, cool down then wrap in banana leaves
I've never been wow'ed by filipino spaghetti bc it is a tad too sweet.....when I used to make filipino spaghetti at home I would use the traditional Italian jarred sauces, with banana ketchup, and add sugar to make it sweeter. I do like the balance of both savory and sweet. Also, I would add mushrooms and red bell peppers to my sauce! it's delicious.

For added flavorss, you can also add diced red bell peppers and Underwood liverwurst. =)

I put liver spread on my Filipino Spag. Some add a few milk as well, if you wanna try that.
Shred the cheese and sprinkle it on top of pasta in the pot and cover it the heat will melt it. When you serve it it will be melty

My aunt adds a little bit of condensed milk to her spaghetti, I add carrots and red bell peppers on mine, adding liver is good too.

It’s sweet in comparison to what YOU normally make but it’s not sweet enough for the original dish that you’re making.
