I found this exact set out on a curb in Seattle a month ago with a free sign. I grew up eating coddled eggs from these little ceramic cups and grabbed them and shouted, "Thank you Lord!! Wohoooo!!"
But these are not for boiling eggs. They are for a runny yolk, poached-type egg. You do like you said, butter the inside, drop the egg, put the dish in the boiling water, cover, drop the temp to warm, cover, wait about 2-3 minutes and done. Now, obviously, if you need your yolk cooked more like a hard boiled egg, go longer and hotter. But neither grandma nor mom ever used these for a boiled egg type. Old school depression era midwest chicken farmers:)) But, I bet you are thanking your wife for her great find at Goodwill:)))) These are definitely collectibles and even used, they don't come cheap...unless the good Lord puts them out on a curb for you to walk by:))))))))))))))))))

@@daveskitchengadgets7311 I absolutely love coddled eggs and I see that you do also. As Shamanbear mentioned, you might think about cooking them a little less getting a softer yolk. Also, to get the most out of your coddled egg experience, look up how to make "toast soldiers" you will be in heaven. :-)

If you can find one of the double size ones they are great for putting two eggs in, some baby spinach, and some back bacon (you might call it canadian bacon) and boil for about 5/6 mins as a runny yolk is amazing and just adds that nice glaze over everything.
Also just for future reference its Royal Wuss-ter (its often over pronounced) and for the sauce its wuss-ter-sher :)

I think it is for soft boiling eggs. I don't see the advantage to hard boiling them, as opposed to the egg shell

Great video Dave. I have been doing coddled eggs for decades now. However we need to find a better description than "kitchen gadget". Coddlers are like artwork in my opinion and deserve more respect than being put in the same category as the "Slap Chop". But for the life of me I am not sure what to call it. Maybe something like covered ramekin. Coddlers are also used to make custard type deserts since it is a gentle way of cooking. Nice find at Goodwill.

I have 3 small coddlers and one large from when I lived in England. I haven't used them in years, but I pulled them from the back of the cupboard this morning to put more protein in my breakfast. Your wife got quit the bargain. I was looking for recipes, and of course etsy popped up with people selling them for $30-40. The Royal Worcester (pronounced woo-ster) has several recipes and cooking times.

I’ve read lots of instructions for these, and they almost always say (when you have the coddler with the metal ring on top) do *not* twist the top off with that ring on top - instead, grab the band and twist it off.
I assume the ring is easily breakable or bendable. I’ve never seen an explanation of why it’s important.

I still have the old family set of the very same coddlers. Was always a treat getting coddled eggs for supper as a child. They're basically a smaller, self contained version of the French way of making ouefs en cocotte. If doing the French version in ramekins you have a bit more space to add a multitude of other ingredients like ham, cheese, cream, diced tomatoes...etc.

Great video. Even without knowing how the eggs turned out, I would've grabbed those coddlers too - and I didn't even know that's what they were. They are unique and very pretty! Your wife has good taste. =) I absolutely love the backsplash in your kitchen too! But I also wanted to say, those egg coddlers sell for 25 euros and sometimes 50 for a set of 2, here in Europe. They are vintage and that type aren't made anymore. According to British tradition (they are British made), you immerse the entire thing in boiling water (not just to the rim). Usually cook 6 minutes for a runny yolk but can be cooked to hard boiled - it's in all the British recipes for those items.
