Tip when using a Weber kettle grill, only place charcoal on half so you can spin the grilling surface 180° to keep them on heat but off flame. Let's them cook without burning. Also, and I learned this from an old German guy at Miller Park, do the beer bath after grilling. As the brat cools it'll soak in more of the beer, or so he claimed.

Charlie this is your Faja. Cook brats in the Indirect heat method. Over no direct heat until cooked through. Then finish over direct heat for that delightful Maillard effect. Then take a foil tray add beer place over high heat. Bring to simmer - then place your brats , onions, etc. in bath and move tray to indirect heat cover with grill lid and simmer for 10 mins. Bob’s your uncle and no snide remarks from non Cub baseball players! Go Cubs!

Disaster! With family roots to the Ottes of Sheboygan and Johnsonville, I can say that the beer soak is essential. Also, turn them by hand (without tongs) constantly- douse your hands and go for it! A split casing is the shame of a brat cook. Also, the post-grilling simmer is what cooks the meat all the way through.
