I have a dedicated imaging VM with no disks attached except a bootable DVD iso with Linux based imaging software on it. In this case I'd attach the HDD of the VM I want to backup to the imaging VM and then boot it from the DVD iso. I can then image the VM HDD to either a network share or attached USB drive.
dism /Apply-Image /ImageFile:D:\Sources\install.wim /index:1 /ApplyDir:G:\ ImageFile = Path to install.wim file on install media (install.esd file on media created with Media Creation Tool) ApplyDir = temporary drive ID for partition where Windows will be installed followed by :\

After running sysprep it just boots up as a new user

You really over complicated the process. Very out of date. All you had to do is hit F8 to get a command prompt.
