The exercises are fine but no substitute for proper paddling technique. Most of the paddling sequences show bad technique and paddles that are too long. For fitness paddling and racing, a wing paddle is the way to go.
Thanks for the comment! We agree there is no substitute for actual paddle practice and paddling technique, this wasn't supposed to be an "either/or" suggestion. However in the case of adventure racing, not every athlete has access to kayaks and/or water to practice in. They often show up to race day completely unprepared for the paddle portion (which may also be in a canoe, raft, or SUP). So, strength training exercises, which are more accessible, are better than nothing. Regarding the wing paddle - another aspect of adventure racing is that you often HAVE to use the boats and paddles provided by the race directors, you do not always get to bring your own.
