If you want to pretty consistently draw Stockfish with white then play the Berlin draw.
And you might want to take a look the GUI En Croissant. The interface is more modern and accessible, although it has some bugs.

I use "Arena Chess Gui" and download stockfish 17 from the official stockfish website.
