Use evaporated milk, it makes the sauce more saucy and gets in the noodles more so it doesn't taste like cooked pasta next to cheese, but actually noodles in a cheese sauce. This still looks good, but trust me, you'll get more cheesy goodness in every bite, and a more consistent cheese distribution that way. Otherwise everything he does is right. 😎

My variation of this beautiful dish: you buy a whole cheese head (the one with holes), put some semi-ready pasta pieces inside each hole, put the head into the baking pan and bake until your cheese is melted and nice golden.
