The BEST Winter Meal (Congee)
The Perfect Winter meal 🍲
Chicken Congee with Rice Noodles
Although this dish is simple. Getting it to have a full rich flavor means using the best ingredients and appropriate steps to getting all the aromas infused.
I usually make a big pot because it’s gone within a couple days.
This recipe serves 6-8
What you’ll need:
1 cup toasted jasmine rice
2 chicken breasts (shredded)
2 pork belly strips (sliced and blanched)
3 liters of filtered water (or light chicken broth)
1/2 onion
6 cloves Garlic (minced)
4 slices Ginger (minced)
4 inch piece Pickled Sweetened Radish
Salt to taste
Pepper to taste
Fish Sauce to taste
1-2 tbsp Chicken bouillon (I used @cookwithknorr)
Aromatics:
Cilantro
Green onion
Sawtooth Coriander
Toppings:
Fried shallots
Fried Garlic
Sambal or hot chili sauce
Soft boiled egg
Chak Kwai Cruller
Salted Soy Beans
Pro Tip: washing your rice well will help prevent it from going bad faster.
For proteins: I cooked them in boiling water for 15-18 minutes depending on size with ginger and salt to remove any gamy smell. Before shredding.

Looks good, but you didn't give enough directions. You need to turn off the heat when you add the Thai basil or they burn easily. Also, you didn't deep fry the egg. You need more oil than that for it to be authentic Thai style. I grew up in Thailand. Trust me. My krapow is god tier.

What's half and half? I don't think that exists in Southeast Asia. Maybe just use evaporated and condensed milk to avoid the complications.

They used to serve this one or two times a week at the International School Bangkok cafeteria. They had a whole lane dedicated to Asian food. I used to get rice soup with meatballs for breakfast every morning.

Are the thai tea kits at Costco worth the money? I would love to make this at home. My favorite thai place gave me the recipe for peanut sauce that is, hands down the best I've had. Thai place near rush street in Chicago is the best. I will leave my favorite dishes to the pros. I will not embarrass myself again😂😂
