*Peka - A Delicious Food from Croatia*
If you’re looking for a culinary treat while on holiday in Croatia, give _Peka_ a whirl. A local recipe for thousands of years, this roasted meat and vegetable dish is cooked inside a special clay dome over an open fire. After 1.5 to 2 hours of cooking, depending upon the size of the Peka, all the flavors of the ingredients are thoroughly diffused, creating a juicy, mouth-watering delicacy fit for royalty.
The attached video describes how Peka is made in the city of Trogir, Croatia, at a phenomenal restaurant called _Pizzeria Mirkec_. My wife and I lived in the cozy apartments above the pizzeria for 7 weeks and enjoyed the tantalizing aromas from its wood-fired oven as they wafted upwards.
If you decide to order a Peka, try to order a day ahead of time to ensure it is prepared at just the right moment. Also, if red wine is your fancy, ask Ivan or Zoran for a glass of Babich. Or, if you’re a zinfandel fan (goo.gl/KJuuE), try Crljenak Kaštelanski, which is the original Zinfandel from only a few miles away in Kaštela.

Shawn P. Mitchell Peka is among my favourite dishes, and my top recommendation for a dish to try here in Croatia.
You can actually also make a great peka at home, but the one cooked on open fire is of course the number one :-)

The next time Tricia and I pass through Split, we should meet up for a Croatian lunch Morten Smalby . Hopefully, the rain will have stopped by then... :)

That sounds like great idea Shawn P. Mitchell. From Saturday the sun should be back, so i think we can soon dick out the summer uniform :-)

the laughter in the background while they are prepairing food is the best seasoning you can get :) laughter is contagious, especially when you add wine

Unfortunately, this is not 100% peka. :) Peka is prepared in a way you need to put embers all over that metal plate.

Thanks for the comment guzicaguzica! You're absolutely right that a proper Peka is completely immersed in the fire. We had the great privilege of eating a 'deep fire' Peka Ivan shortly before this, and it was exceptional. Especially with home-made Ajvar! :)

So the embers are in the peka?

    • @ShawnPMitchell
      @ShawnPMitchell  9 ปีที่แล้ว

Kid Chef Hot embers are poured over the top of the metal dome. Hopefully, no ash or embers gets into the food. :)

What Shawn said + metal dome has a detachable metal ring around it so you put embers on the dome but the ring keeps it from sliding down so that way embers stay on the dome. It's delicious, trust me.

Just a little correction - Mirkes is pronunciated like "Mirkets", it's a male first name, deminutive of names Mirko and both mean "one who is peaceful". Mir means peace in Croatian. I don't think this matters, but the more you know, the better :)

The food is not actually called peka, but the dome that the food is covered with is called the peka.

Thank you for the comment, Wolfiy Plays. I'm guessing that it all depends on who prepares the peka and how much lard and olive oil they add. We certainly had a delightful peka experience that wasn't too oily at the Pizzeria Mirkec.
An octopus peka may also be an alternative that has less fat. We had a great octopus peka in the birthplace of zinfandel wine in Kaštela. Here's our video of the experience if you were interested: th-cam.com/video/D4DLd1gBfwk/w-d-xo.html

I love this recipe, I love the video and I even like the music. But videos where the music is louder than the narratives are difficult to listen to. You might want to lower the volume so that the music is less obtrusive, more background and viewers can actually focus on the recipe. Other than that, I really enjoyed the video. Thank you for sharing it!

+fattymoko Hello and thank you for the comment! When I published this back in 2013, I was still new to the world of video-making. I've learned many things since then and continue to try to incorporate my lessons-learned into each new video. Getting the right audio balance is always tricky! :) If you're looking for a written version of the recipe, check out my wife's blog at: triciaannemitchell.com/2013/04/03/croatia-peka-culinary-trogir-roasting-meat-restaurant-recipe-food-travel/

Peka, sač, it is not only Croatian but Balkan tradition. All this region has similar food with different names. So just find other youtube films for explanation.

Thank you for the comment Hasan. After I made this video back in 2013, Tricia and I have had the chance to visit many more places in the Balkans. The food, the people, the history, and the culture are all intertwined into a beautiful tapestry that is a joy to experience. We look forward to discovering more about this complex and enchanting region. :)

Peka came from Dalmatia, other Balkan countries learned this technique from us therefore it is an authentic Croatian way of preparing food.
