    Thanks for the video! I never really liked egg salad but my girlfriend recently bought plenty of eggs for another recipe before deciding against making it. I looked up different egg dishes on TH-cam and came across this video. This recipe is the perfect way to get rid of twelve dozen eggs. The only changes I've personally made is not using as much red onions, cooking the eggs just slightly under, and adding some garlic. My go to dish to make with the egg salad is a sandwich with pretzel buns, parmesan cheese, tomatoes, and some spring mix at the bottom. My girlfriend added just a little bit of truffle oil to the egg salad the other day and it was heavenly as well.
    Thanks for showing us your recipe again! It's one of my go to meals now.

      You can definitely eat it raw as well, but blanching makes it a little softer, easier to roll and milder in flavor. :) So happy you love my videos Christine! x

    I LOVE you!!! You are so spot on about how egg salad is mushy. I was just making egg salad sandwiches for my husband's lunch this morning. I took my boiled eggs and pulverized them with my pastry cutter like I always do (and my mother before me! lol) My husband loves egg salad but I dislike the mushy texture. Why don't I think about this??? I LOVE your videos and simple but genius ideas. THANK YOU LISA!!! :) I share your meal prep videos with all my friends.

      Haha. That's funny with the pastry cutter! Sometimes habits and learned behavior (especially in the kitchen!) is a huge influence. But now you can try them a different way for yourself! Hope you enjoy Lori! x

      You can use a pastry cutter without turning your eggs to mash. That's the tool I've always used and my egg salad is nice and chunky. I find that the key is to use a wide, shallow vessel instead of a small, crowded bowl. A 9x13 casserole dish works if you don't have a big work bowl.

    I have made this multiple times and it is loved in my house. I like to add just a tiny amount of agave nectar to it which just rounds it off. Sometimes I add a little pickle juice to it too. Yum!

    That look delicious 😋 you give me an idea what to make for the Holy Week and with all the extra eggs I have from my sister’s hens. 😂 We usually eat our egg salad with saltine crackers or tostadas and spread avocado 🥑 and I also add a Serrano or jalapeño chili to it.     Great recipe, thank you. You can use the same water in which your eggs have been cooling, crack them, put them back into the bowl then peel, you save water and you give time to the water to get inside the cracks so they peel in a breeze

    Today was the first time I ever made potato salad. I never like the ones in the store. I cooked the eggs in the instant pot which made it so easy, I did the rest of the recipe exact and it turned out scrumptious. My husband loved it. too.

    Frying the onions in butter, for few minutes and adding them into the salad would also taste good. For those who don't like to eat onions raw.

    Can I ask why you peel the eggs under running water? I find if I put the cracked eggs back in the ice bath the water gets under the membrane and are much easier to peel without wasting water. Sometimes they might need a second dip.

    I usually mix all the ingredients except the eggs first then I incorporate the eggs in chunks as you did, also I replace mayonnaise sometime with homemade ( vitamix made) hummus for a healthier option

    Great recipe! I'll have to try it as a veggie wrap, since for some reason, whenever I eat eggs with bread, the bread just completely subdues the egg flavor and I end up just eating the eggs by themselves.

    Ah, what a great idea ~ blanching the collard green. I never liked the chewy texture of the leaf in the raw form, so will try blanching for sure.

      Blanching softens them up and gets rid of the bitter flavor in collards. Win win! You could always use Swiss chard for a softer flavor and texture as well (without blanching). :)
