My mother and I enjoy tea time, nothing traditional like the British as we are American but we usually do afternoon tea when the opportunity arises, typically a single pastry, or sweet/savory item, a cheese, and the tea itself. We both prefer honey in our " hot tea" and 9/10 times I drink Earl Grey. It's not traditional by any means but any time a grown man can make a moment from his busy life to schedule an afternoon tea with his mother...is well worth it. I work an afternoon shift usually until early the next morning so when I get home I almost always have a cup of tea then. A small comfort after a 12-16 hour day
4 slices white bread 1/4 English cucumber 2 oz cream cheese 1 tbsp mayo 3/4 tsp fresh dill 3/4 tsp fresh chives 3/4 tsp lemon juice 1/4 tsp garlic powder Salt & pepper, to taste 1. Peel cucumber and cut into thin rounds. Place slices on paper towels and sprinkle with coarse salt. Let rest for 15 mins to extract moisture & pat dry with paper towels. 2. In a medium bowl, mix together softened cream cheese, mayo, dill, chives, lemon juice, garlic powder, and salt. 3. Spread one side of each slice of bread with the herbed cream cheese. 4. Layer cucumber slices over half of the bread slices. Season with fresh cracked black pepper, to taste. 5. Cut each sandwich into rectangles.
English cucumber sandwiches: White bread, crusts removed. Cucumbers sliced thinly. Spread butter thinly on the bread. layer on cucumbers top with second slice. 😅
Everything you have there, were my mother's favorites but, she would have skipped the tea and gone for a coffee or bottle of champagne! She was the only person in my Scotch-Irish family, who did not like tea. She would need some chocolates and fresh flowers too! I love adding little mini-quiche Loraines. Buttering the bread does help with preventing sogginess a little bit. Thanks for bringing back a memory!
You can get French bread sliced long ways. Take crusts off, cut into long rectangle. Spread one side w egg salad or tuna salad, roll up n cut into 1 inch slices to make pin wheels. If you can find a baker that will dye the bread dough various colors for your sandwiches, then you are the Queen of Tea!!!!
There are so many things you can do with the crusts. I have pulsed them in the food processor or my blender after my food processor broke and used the crumbs in meat balls and meatloaf. Onetime I made stuffed mushrooms and used the crusts in them. Yummm!!!I’ve also nibbled on them with some of the left over spread or with butter and jam. 😅

It's better to cut the cucumber lengthwise thinly. The rounds fall out of the sandwich.
