Think of a clutch as like a disconnect between the engine and the transmission. When the clutch pedal is pushed down, it disengages the engine power from the gears so you can switch to a higher or lower gear.
Gears have specific rpm areas they work in, kinda like the gears in mountain bikes.
If you need to suddenly accelerate you can pop a lower gear and get way more power from your engine. Or if you wanna save some gas mileage you can drive with as low an rpm as possible. It just brings a lot of flexibility to driving, and its just a lot more fun overall. There's a reason motorcycles are also manual. Its also way cheaper to maintain and more reliable.
