- Fish and chips, or more colloquially written as fish 'n' chips, is one of the most iconic dishes in the United Kingdom. Similarly to pizza in the USA, you can find fish and chip shops pretty much everywhere all over the UK and everyone will claim that their local chippy is the best. One thing that I have heard though is that London is not the best place for fish 'n' chips, but rather Northern England and Scotland are where fish 'n' chips reigns supreme.
Our first stop on our UK trip was Edinburgh, Scotland, where Tina and I were visiting a friend of ours. Originally we were going to eat at Bertie's Proper Fish & Chips, which is the most reviewed chippy in Edinburgh if not all of Scotland, but when we saw how touristy the place was we decided to pivot. We instead headed for Salvatore's, which is the best reviewed takeaway style of fish 'n' chips in Edinburgh, if not all of Scotland. It's definitely the best reviewed of the more hole in the wall type spots, as it's not the most fancy looking restaurant and you'll easily walk right by it. Will this fish 'n' chips blow our mind? Or should we have stuck to the well-reviewed tourist joint? Let's find out together!

Sometimes you feel like a chippy fish and chips and sometimes you feel like a restaraunt fish and chips. Bertie's is for the latter.
Yeah, one must side-step the tourist traps at all cost if authentic local grub is the objective.
A fun fact. Fish from colder waters, like the north, will have fish with more fat content and marbling. That might be why spots up north are more reputable for fish and chips.
You can have good fish and chips in the south and bad in the north - it isn’t exclusive - and the UK the fish they use are most likely from the same fishing zones, and probably a hell of a lot of it imported from outside UK fishing zone anyway (Iceland, Norwegian Sea)
The biggest fish market is in London, but the fish will be coming (mainly) from the same places. Some places like Grimsby in the north will undoubtedly have fresher fish in some shops because they are fishing towns with their own markets. Fish lands and is consumed locally.
The reasons why there is a perception of a “difference” between north and south uk in chippies include:
louder northern voices - often people who have never visited the south to any great degree, but have regional pride (and I say that as a northerner who has lived in London for many years) - perception come from value for money, slight regional differences in side dishes (mushy peas, beans, curry sauces, fritters etc) and a preference for a different fish (haddock) in north and Scotland rather than cod in the south.
The difference in the price stem from increased demand for jobs and property in the south, leading to higher demand and higher living costs. Many chippies in the midlands and north are long established, often family businesses whereas in somewhere like London the turnover of shops and restaurants in a street can be relatively rapid.
New staff that aren’t linked to the family business and therefore have no vested interest, cost cutting to ensure financial stability of a business, and a much larger demand for other cuisines in London all mean that when tourists visit they are all too often either paying too much for relatively poor quality versions (usually anything in central london near a tourist attraction) or are paying through their nose through gentrified versions. I also see many TH-cam videos where they eat fish and chips in a pub. While they can be good aren’t the same as from a chippy and I don’t think that they can give a real impression of what the food should actually taste like.

I have a close friend from Liverpool, so I somewhat agree with the northern pride aspect lol.
It's always Haddock in Scotland and usually Cod in England, this makes a difference also.
More likely it's because the fish gets from water to plate quicker. Scotland is one of the few parts of the world that can get a fish caught that morning cooked in a restaurant that day, even in the best costal towns in England the fish has to be packed in ice for at least a day before it gets from the fishing spot to the market.

The pizza shown in the glass is just frozen pizzas which are deep fried. Its a cheap option for when you're drunk. That chippy also does fresh pizzas, there's a pizza oven in the wall to the left of the counter bro. I used to go there for lunch when I was at school.

@@uaeats It was pretty good but that was about 10 years ago. I haven't been recently. Back then it was £2 for a half pizza and chips at lunchtime. Things have gotten a lot more expensive, especially since COVID so I wouldn't be surprised if quality has suffered because of that. I noticed that in the portion you got as well, back then you would've got a lot more chips and a fish supper would've cost you about £5. I wouldn't be surprised if it cost you about 7 or 8 quid
@@uaeats There's a really good chippy in Newhaven (Northern Edinburgh) called the Fishmarket. Its quite far from where you were in the video but its by far the best in Edinburgh. Its right on the dock and its right next to the fishmongers where they get their fish from. Its a bit on the pricey side (about £10) but the portion is huge and the fish is really fresh. They also do fancy stuff like lobster, crab and mussels.
I hope your channel continues to grow so we can see you travel the world like mark weins
And don't underestimate the pizza, you need to remember the pizza gets deep fried so a regular toppings heavy or gooey cheese pizza wouldn't really work.
But also don't get the regular pizza from a Scottish chippie, get a Pizza Crunch which isn't just deep fried but is also covered in batter.
Finally someone who does research on an city before turning up and trying all the wrong places 👌🏻 well done man

The original Elephant House actually burned down recently and the one on Victoria Street is a new venue (JK Rowling almost certainly has never been there). Also, the building you were standing in front of is the National Museum of Scotland, not the University of Edinburgh.

Those pizza slices are there for people who want deep fried pizza. The cheese side is submerged in batter and then friend. Sounds disgusting but trust me - you HAVE to try it.
Interesting fact for you perhaps: curry sauce is renown more on the west coast with chip shop products. In Edinburgh and fife a sauce ubiquitously named 'chippy sauce' is popular, it's made of vinegar and hp brown sauce and each store has it's own mix.

Haddock is fairly popular in New England, but I rarely see it in other parts of the country.
It's common in Scotland. In England it's more so cod I believe

I agree with UA's comment about how cod has a more neutral flavor, however, haddock is considered to be a more premium quality fish than cod and it also commands a higher market price per pound. I personally prefer haddock in fish & chips due to its more firm meat texture and bolder flavor. The meat texture of cod is more crumbly and has no flavor, imo. That's why cod is usually consumed as fish & chips because it needs the deep fried breading to hold the meat together as well as tarter or malt vinegar sauce to give the meal more flavor. If you eat fish & chips with haddock meat, it makes it all the better.
If there's a preference Haddock over Cod everyday. All the best Fish and Chip shops use Haddock in Scotland. Look up videos on Anstruther Fish bar and The Wee Chippy best in the UK.

Chip shop chips aren't boiled first. They are soaked in water, then blanched in oil at a low temp and then a high temp for a slight crisp.

You shouldn't really be surprised at the Pizzas being on offer at a fish n chip shop, as a large portion of fish-n-chip shops in Scotland are traditionally owned by Italians. Italian sounding Chip shops are pretty much the norm in Scotland.

Poppies in London is amazing BTW. They are in SOHO and have longer operating hours than most. They have the best home made tartar sauce there. Poppies is as as good or better from the look of the video. They give a huge piece of fish in London. They have Haddock or COD. Its 19 pounds (I looked it up) The portion is huge and could split between two people. I always order COD because it has a very neutral taste as you mention. Poppies is at least twice the size of those portions. BRITS never use tomato sauce (ketchup) on chips. Its always malt vinegar. Wow one person working alone for 40 years is UNBELIEVABLE!!! If he is sick or doesnt feel well, then the store cant open. I cant wait to see your London videos since I go there often. One of the places I go alot is Wagamama becuase they have alot of locations and do takeaway. Many places in London do not do takeaway. Some say they do and when you try to order they claim to have not to go containers and such. (I am not joking). In London places near the tourist peak areas like Leicester Square, Picadilly, generally suck. You have to do some research. You are right that Google reviews on some places can be all touists. In London and other places in Europe Yelp reviews has almost nothing. Google reviews or in some cases Tripadvisor (although Tripadvisor tends to be 100% tourists) that can be ok if you read between the lines. For Italian food in London Bizarro in Paddington, Leon is healthy fast food (somewhat) they can be ok, Itsu for sushi (half price 1 hour before closing) (Note I am not a sushi expert. Some people may say its not good enough. In London any restaurant that uses the word American (RUN) all thourist traps with lousy food. Anything that says american style or has the US flag, RUN dont walk. Garfunkels sucks also. Patesserie Valerie is good for pastries and coffee. I avoid US chain places there since they are fairly expensive in London. I heard Dishoom is great for Indian food or Nandos (chain). Patty and Bun not a bad burger. Glad you are covering London. Sometimes I will grab a sanwich and soup in Pret which can be tasty. Best bagel is Beigel Bake in East London. Prices rock bottom, salted beef and mustard is amazing (the mustard is spicy) take a small bite first or you will clean ourt your sinuses in one bite. Borough Market is amazing. The main issue crowd are crushing on weekends. Weekdays can be less. The coffee place Monouth s the best in London. The cappuccinois a must! Order a regular cup not to go or you have to pay an extra 5 bucks for a takeaway cup. (recycle issue or something) Also good foor can be found at Spitalfields. Tons of great international foods. Smaller crowd than Borough but less hours.

I just love Fish and Chips, but now when the plate of HADDOCK or POLLOCK arrives at your restaurant table, you find flat pieces of fish
from the tail end and not the nice fat pieces from the head end........Maybe unless you go to a more expensive sea food eatery, where

Salvators is defo not the best fish and chip shop in Edinburgh lol. Also he hasnt run it by himself for 40 years. He has other staff. Still props to the old boy for working for the 40 years though. Its funny. You nailed the curry sauce part. It is made with powered curry. Thats literally it. Its curry powder mixed with water. One of the better chippys is called city restraunt on south bridge. Also pretty close to salvatores is another one called f#sh. Yes thats whats its actually called. They do good fish.
Chips are never boiled. They are pre fried(Blanched.) at a lower temperature 120 Degrees, and fried quickly, to get crispy at 180 Degrees..You NEED to come to Northern Ireland for a Pastie Supper……

The worst fish and chips I have had were from the most unlikely locations, in fact, next to where fish are landed, ie Ulapool, Kyle of Lochalsh Aberdeen. It seems that some of those places find the very cheapest fish.

Local chippies are always gonna be better in the UK for this and looks like you lucked out! That fish looked sound. I live in the South East of England and on the coastal areas like Whitstable and Dover you will still get just as good fish and chips, and also Whitstable is world-renowned for its oysters! You completely missed the Fish Market in Newhaven, The Chippy by Spencer and L'alba Doro. Easily the 3 best and well known Edinburgh chippies.

The strangest thing is this.. in my experience the best fish and chips I've had have been from Italian run chip shops in Scotland.. even the fish in chips in Italy is nowhere near as good as the Italian run fish and chip shops in Scotland.. I have no idea why this is but its just a strange but yummy observation.

Hey 👋 UA great video I do have to go let you and Tina know the vinegar used for chip and fish is molt vinegar not regular vinegar here in America to many places used apples sider vinegar so make sure is mult and fun facts if you go to a five guy's they always have mult vinegar for their fries 🍟 😋

As an Englishman who lived in Canada for 10 years I can testify that Uk fish n chips just cannot be replicated there or in the States . It’s prob a combination of the oils used , the 10-20 + year old fryers and the potatoes used
If you love fish and chips, go to Ireland. Best I’ve bee had was in cork. They catch the fish same day and fry it. Super fresh.

It’s one of Edinburgh’s best chippies; gutted they no longer deliver to my house.
The Elephant House Cafe featured isn’t the original one, which was on George IV Bridge and gutted by fire in 2021.
The pizza you described as mid is deep fried - I think those are frozen then deep fried - fun fact, when Scotland played Italy at football (soccer) the Scotland fans were singing "we're going to deep fry your pizzas" 🤣 - Anyway, the deep fried pizza is awesome with some chippy sauce although is like a gazillion calories. I'm sure you can get it battered too, "Pizza Crunch" if you're really chasing that early 30s heart attack! 😅
In general, the fish and chip/pizza place combo are the best place for fish n chips.
It may already have been mentioned that Edinburgh chippy sauce is not found in most other areas of Scotland let along Scotland. It’s brown sauce and vinegar and is great. As an Edinburgh local I miss that when I go elsewhere. P.S. the deep fried half pizza looks mid but is really crunchy and way cheaper than fish. However it will be much less nutritious than fish. I hope you enjoyed your trip to Edinburgh and “haste ye back” ❤
Point 1. St Andrews and Anstruther are the best places for fish and chips in the UK. Point 2. You need to have haddock. Much better and more flavoursome than cod. Enjoy your travels

I suspect those dreadful-looking pizzas were for "pizza crunch" (battered and deep fried pizza) -- which is kinda better than it sounds. I'm local to Edinburgh and haven't eaten here, but I would imagine the regular pizzas are far better (you'd hope so with a name like Salvatores)
