    I used to think like this guy. It makes sense...low ppm should not cause a problem. But the smallest amount of gluten triggers an immune system response. I used to think I could tolerate 2 beers, but did not know how bad it made me feel till I cut most gluten from my diet. Then I thought I could tolerate gluten reduced barley beers until I cut all gluten from my diet. Now even those trigger a reaction...I used to make fun of people who claimed to be gluten intolerant, then a Dr did a biopsy on my small intestines...turns out the whole time I was one of them. In the US we are only diagnosed with celiac disease once the damage is done. If you have frequent gas, bloating, diarrhea, joint pain, arthritis, or even eczema, do yourself a favor and stop eating and drinking gluten...regardless of how low the ppm is.

      Ya. It seems like he only did half of his research. Great math, but he didn't actually ask anyone if his conclusions were accurate.

    The science has evolved past ppm as the ppm test only tests on whole gluten protein chains, in other words coeliacs are also sensitive to partial chains for which there is no current test. What is being labelled as gluten free by the official organisations is legislated but on bad science 😢 I stick to NGCI (Non Gluten Containing Ingredient) beers as a coeliac. To hear companies providing cross contaminated malts as fine because they are definitely less than 300ppm and dismissing the auto immune deficiency side of being coeliac is worrying

    7:00 - 10:00 is FULL of a lack of knowledge of actual gluten sensitivity. Your PPMs are arbitrary (as are the official gov. standards) and the "hypersensitive consumer standpoint" comment is downright offensive.
    For people coming for actual information on brewing gluten-free beer, you have done no service.

      Yea sadly I came to the same conclusion.
      I don't even have Celiac but a blood allergy to gluten.
      Even just as little as two light pilsners mess me up.
      Another reason to add the dislike button back.
