    No pectin and no water bath canning?

      Diane Grant That's right! :) I'm not sure if you've seen my other Jam Recipes also, but I don't use Pectin in any of my Homemade Jams and they all turn out great. I don't do any water baths either as you can see in all of my Homemade Jam videos. Don't Forget To Subscribe so you can stay in the loop of "All" New Recipes coming straight from Rise Wine & Dine :)

      You don't really need pectin as berries and other fruits contain natural pectin, one reason why some people who make pectin-free jams slightly crush their berries before cooking them to release their natural pectin.
      Sterilizing jars (washing with hot water and/or boiling the jars) can prolong the life span of the jams. That's at least how my cousin does it. :)

    can you decrease the amount of sugar and still get a preserved jam? Could you also use brown sugar for a richer flavor? I'm very new to this?

      In my opinion I wouldn't as sugar is what helps to preserve jams. I haven't used brown sugar with jams actually so I cannot answer this question.

    Can hardly hear you , need to raise your voice consistentl.
    No wetbath for jam? Is that healthy or are you freezing them?

      Not sure what's on the go, on your end... Sorry about your volume!
      I've never did a waterbath for any of my homemade Jams in my life actually to be very honest with you!!
      My Jams are either always in a dark cool pantry or refrigerated.
