    I have been making the Sweet as honey recipe for two weeks. this recipe will yield TWENTY FOUR cupcakes! I LOVE THIS RECIPE! it's tender and moist, one of the best Keto deserts I've tasted. I also put ALL the the nuts in the batter.

      Great Idea! As Wes was cutting into the breads, I wondered if SweetAsHoney's could be made into muffins. Do you mind telling us how long did they bake for? signed NorthernLady

      @@mariaoropallo6853 If I remember correctly it was about 30 to 40 min. Keep an eye out, all ovens are different. I LOVE the muffins and they FREEZE well, If my son doesn't eat all of them. Joanie from Northern California

    I made the sweet honey one. I did not strain my zucchini. I hate dry quick breads. When I make "normal" zucchini bread I don't strain the water out. Turns out I was right. Was nice and moist. Only thing is next time I'm puting the 1 cup of monk fruit in not 3/4. It's not sweet enough with 3/4. Thank you. Good recipe from them.

      Thank you so much for this comment. I actually have a perfectly good “regular” carb recipe I’m thinking of just subbing with the almond/coconut flour and monk fruit sweetener and I add a WHOLE POUND of UNSTRAINED zucchini to my bread.

    I have been making the Ruled Me zucchini bread for a few years. It is similar to the first one. I have also learned to use the smallest zucchinis that I can find, no seeds and much less water. I just blot with a paper towel.

      @@dana102083 Oh, well maybe my recipe can handle more moisture. It does only use 3 eggs and 1 cup zucchini but I use a little more zucchini.

    I would love to see a chocolate zucchini cake battle. The best chocolate cake I ever made was with zucchini, but that was before Keto. LOL I'm going to print these out now they look so good. Thanks for the video.

    Someday I will remember to stift my dry ingredients! I just made keto zucchini bread/muffins on Sunday..try adding chia seeds and flax meal..ups the fiber..so yummy.

    Made the Sweet As Honey version this weekend. My non-Keto family & I LOVE it! 1 cup of "sugar" would've been too sweet, so the reccomend 3/4 cup was perfect for all of us. Having never baked with coconut oil I was hesitant, but no worries here! It did take the full 70 minutes. Anything over that would've been too long. We are so thankful for this video, Wess 💌

    I'm going to put the zucchini in the oven to dry it out a bit. I do it with cauliflower and it works great! Wish me luck.

      Update: My first batch was oven dried zukes. It was good but my second batch was using cheese cloth. The cheese cloth method was better. It had just the right amount of moisture. The oven drying method does work better for rice cauliflower. Thanks for the great recipe. I used the Sweet as Honey recipe.

    keto zucchini bread - cut and ate while bread still a bit warm - delicious - great with or with out butter - may have put a bit more cinnamon but it worked great. interested in seeing how the texture changes over the next few days

    I’ve never had or made zucchini bread but a friend gifted me a bunch of zucchini so I decided to give it a try. The Sweetashoney recipe was delicious!! The only thing that disappointed me is that I didn’t have any nuts to put in it. I’m making another loaf to give as a thank you to my friend. This is definitely going in my Keto keeper box of recipes. I can always count on you Wes to lead me down the right path of deliciousness!!❤❤

    I combined the two recipes. I used the 1 and 1/2 cup of zucchini amount and nuts from the first recipe, and also the spices used in the first recipe. The rest of the ingredients are from the second recipe. Turned out phenomenal!

      Try Cream Cheese Sausage Balls by Low Carb Life. They are fantastic. I double the recipe and my non keto family loves them. Reheat in the air dryer for a crispy outside. So good with so many flavors. Check it out.

    Wow. I just made the LowCarbMaven recipe and it was such a TREAT! Thanks for doing this challenge. Zucchini bread was one of my mother's "go-to" recipes that I haven't thought of in years...Nice memories. (I substituted vanilla whey protein for the unflavored because that's what I had on hand...cut back the sweetener just a bit to compensate. It was great!)

      Those are little plastic, disposable soy sauce dishes from a local sushi restaurant. LOL. I thought they’d make great prep dishes, so I asked the waitress if I could have some and she gave me 5 of them. I wash and reuse them. LOL. 🤷🏻‍♂️❤️

      You can safely leave it out without much effect. If you wanted, you could probably substitute a 1/2 teaspoon of nutmeg instead. But I don't think you'll miss that much just omitting it. 🙂

    THANK YOU THANK YOU THANK YOU - I want to add more veggies and fiber to my diet and these are great possibilities. I like another person's reminder about making muffins - but I typically cut these loaves down the long center, then cut the "slices" to get a serving size. Less crumbly.

    Do you suppose that you could do a similar bread, but with rhubarb. I imagine more sweetener would be needed, but I wonder if it would work? And thanks Wesley!

      You are my favorite keto channel. These recipes were perfect timing forca family getv TY together at the cabin on the lake. I will be serving keto zucchini bread for breakast with whipped cream cheese. Yummy!

    I haven't made it to the end of the video yet, but I think more recipes should be using protein powder. Lots of recipes out there that already use it, but I never or rarely see it in a keto item.

    Hey again. Do you know if your zuchinni is frozen will it work? Mine were picked, frozen , and done about a month ago. Also. It's been a few hours since your bake. Any change of mind? Did you try butter or cream cheese later? Looking to make my own birthday cake...or lovely loaf. Thank you again....and yes i can see now what's on your shoulder. Congrats!!!     I just received a zucchini the size of Texas, almost... I’m going to try this tomorrow. I think I’m going to put it through my juicer to get the water out. It should be super dry!...I hope not too dry
