I was in Valenciennes in northern France for a week in 2022 and I think I went through 1 intersection with a traffic light, everything else was roundabouts. Also, most rental cars have GPS in them which works a lot better than maps on phones as they’re not reliant on cellular service.

I drive a manual in the states so it’s not an issue for me. It’s why I like renting a car in Europe. There are more options for us manual drivers.

I'm surprised by your claim that gas stations are few and far between. The reason may be that you're looking for gas station on the side of the highway. Many such gas stations, over time, closed due to competition from gas stations affiliated with supermarkets (gas stations affiliated with petrol companies tend to be slightly more expensive than those associated with supermarkets). The trick is thus to look for supermarket chains such as Intermarché (larger villages are likely to have one). Any GPS application will anyway display gas stations.
Regarding tolls: they may be paid by Visa or Mastercard. In France there are no practical differences between these two networks.

Do you need an international drivers license?

Nope, no need, though I usually bring one along when I travel. It was $20 at the local AAA office.

Are you saying toll roads only take visa? Thanks!

No. They take most common credit cards in use in Europe. So no American express and Visa Electron (low level debit card if you don't know what version it is, essentially for kids first accounts) can't be used either. So most Visa, Mastercard and CB variations are accepted.
A silly thing to remind : don't forget your ticket when you enter the toll. It sounds stupid but there ARE people who forget to take it and have to pay a fixed price that is quite high. And make sure you don't loose the ticket if you did think about taking it.
