I'm a big guy at the upper end of the Obesity scale and have severe osteoarthritis in my knees so need to maximize my cushioning/shock absorption while giving me stability when dog walking on muddy grass fields. Liked the look of the Hoka for the sole, is that the best option for me?
Great review - i have Achilles tendinitis and I am looking for waterproof walking shoes for mild trails. Out of the 3 you mentioned the NB was good for Achilles pain , but would the other two offer similar support? I am leaning more towards the Hokka.

I run in Saucony Tempus and absolutely love them. Would the Asics GT2000 12 be closest to them in terms of stability elements with gtx?
Yes, in that they are both primarily stability shoes.

The asics could work well but the low drop of the speedgoat isn’t ideal - typically the higher the drop the better
