    Red Velvets were named as such because the Red came from the chemical reaction the buttermilk and cocoa powder. The Velvet is indeed because of texture, but because of the moistness and melt-in-the-mouth effect that is created by using oil instead of butter and when the vinegar reacts with the baking powder/bicarbonate of soda to aerate the batter.

    It looks like I'm a hipster. Whenever I don't have any red food colouring, I just put any colour I'd have on hand. Been making whatever-coloured velvet cakes for years.

    The reason they called it red velvet was because the cocoa powder, buttermilk, and vinegar caused a chemical reaction that gave the cake a brownish-red hue. They used to enhance the color with natural red dyes, such as beets and radishes.

      andrewjb20 That was the reason they called it red. But the reason they called it velvet was because the high acidity of the batter made for a softer crumb after baking.

    so, what I call green velvet is actually a tomato soup cake made with green heirloom tomatoes (there's an heirloom variety that doesn't turn yellow, orange, or red/pink, it stays green) and a bit of kale juice for color. oh, and it's pretty amazing.

    I am a baker a profecinal and doing the crumb coat was very smart but, with a crumb coat you have to frosting it perfectly to make sure the crumbs don't come out

    For holidays you can make four layers two green and the other red in a pattern. Do the same thing and boom holiday velvet cake.

    A crumb coat is a very light and thin layer of frosting. "Professional chefs" usually use the excess frosting oozing from the edge and add more when needed. They don't add frosting for a crumb coat

    Why are people asking stupid questions about the crumb coat? When you ice a cake without a crumb coat, instead of being one solid color, the frosting becomes speckled with whatever color cake you are using & creates a grainy texture. It's also a lot harder to ice an even final coat of frosting without it. Plus, the cake will be slipping & sliding everywhere since chilling the crumb coat stabilizes it, & if it isn't stabilized, it even makes it harder to lay/mold fondant over it. It's not going to look presentable if you are baking this cake for someone & it looks sloppy & grainy. As she said, she only used the crumbs on tops as decoration as most people do with velvet cakes. Get it together people, and stop nitpicking over inane things.

    I have never heard of blue velvet or green velvet I was just gonna make my BFF a green cake either way for her birthday.... And I thought crumb coating was called crumb coating because the butter cream or whatever actually had crumbs in it
