- BISCOTTI with ALMONDS & DRIED FRUIT
4 extra large Eggs
1 cup Sugar, white (200g)
1 cup Brown Sugar (180g)
6 oz Butter (170g)
1 tsp Pure Vanilla Extract (5ml)
1 Lemon (Juice & Zest)
1 Tbsp Baking Powder (12g)
1 tsp Baking Soda (4g)
4½ - 5 cups All Purpose Flour (540-600g)
1 cup Sliced Almonds (150g)
1 cup chopped Mixed Dried Fruit (Figs, Dates, Raisins) (150g)

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?

@@Celeste11100 I surely agree, infact I've noticed that best professional chefs in the world are men. BTW, the woman here in Italy has been and, in some case, still are Queens of the house and Masters of the kitchen. I'm out for work from 6 a.m. until 9 p.m. And my wife cook gorgeous meals for my children and for me every day. She's an housewife by choice, and if I dare to touch even a pan, she beats me... Sometime I cook too but, since I'm not used to, I mess up all the meals... I use BBQ sometime in summer weekends, this is my domain, and the only period when I'm allowed to cook something :-) On the contrary, woman at work here in Italy, usually go for frugal meals, buying junky foods at local big M or crowned ones, if you know what I mean... ;-) I usually go to a farmhouse near my office, to consume my meal (all woman there). Other than that, there's a problem here in Italy: woman's income, even for the same job position, is lower in respect to man's one, so usually if someone have to choose which one of the spouses stays home, if the woman is not more skilled or educated than her man, you could bet the choice is for the woman to stay home, for economical reasons (sorry, I don't want to be homofobic, same concepts should apply to gay couples too).These are the main reasons for my previous post. I'm sure your husband have time to cook for you and, knowing you won't beat him, I'm happy for him :-). Merry Christmas to all of you!
@@fabriziodutto7508 Haha, I know what you mean. I'm from Uruguay but my whole family is Italian and yes, women are the ones doing the cooking most of the time. Men in my family tend to do BBQs (as you do) in the summer as well but that's about it I think...
If I have to be honest, I don't like to cook myself but as a working woman time is a big issue for doing elaborate meals. It happens everywhere.. During weekdays/working days is not that easy to find the time to cook properly, which is a pity really.
By the way, where are you from in Italy? Which provincia/regione? (if you don't mind me to ask). We should probably be writing in Italian but your English is very good! (and it's easier for me to write in English as well although I can speak Italian)

Mama Gina! I love biscotti, but it is expensive to buy in the grocery store. How nice to have a recipe that we can make our own at home, and have 10x the amount to eat and enjoy. The perfect snack to offer visitors with a cup of hot coffee. I don't drink it but the rest of the world does, so a nice snack to put together for them! You amaze me with your energy. You certainly do NOT look 84 years old. I only hope to look as vibrant and young as you do at 84! Thank you for making these wonderful recipes for us, Mama. We love and appreciate all that you do. My imagination - I swear I can smell the heavenly aromas in that kitchen. I’m 80 years old, and Gina brings me way back to my youth. Both Grandmothers were from Italy. Gina - the body language, the accent, the love, the cooking and baking., oh yes, she brings me back with all my senses.

Oh my Gosh, I just did a quick search for a biscotti recipe and found Grandma Gina's. I made in in approximately 15 mins prep time and as she said 20-25mins cooking time. WONDERFUL! I only made 1/2 batch and it made a lot of biscotti biscuits. Also, I used gold raisons, cranberries and slivered almonds. Honestly, I am absolutely THRILLED with this recipe! THANK YOU GRANDMA GINA! I can't wait to watch and try your other recipes! I'd love to post a pic but not sure how. You would be proud! By the way, my husband usually ONLY eats chocolate...but he was my guinea pig this afternoon....tried my biscotti and loves them!

Just made your biscotti Gina and they are delicious!! I just wish I was as good as your are at handling the dough. I floured my hands to help me form the logs, and I only used 3 eggs, because I misread the recipe. But they came out perfect and are delicious! My husband thanks you too!

I always have espresso coffee with a teaspoon of sugar when I have friends and family visiting. I drink caffeine most of the time but occasionally I will have decaf espresso if that is what is being served. First thing in the morning I like to have a cup of brown coffee with a bit of milk and a teaspoon of sugar. Thank you for watching my channel. God Bless.
