    Oh, I love how proud the young man is, carrying that single piece of firewood, he's helpful, providing for family:))) For me pickling peppers, making ajvar, fermenting sauerkraut and quinces in all forms are dearest memories of fall. Love whatever you do:)))

    Jessica your content always has a relaxing vibe as a viewer watching in the evenings. It clearly shows that you enjoy homesteading and raising your children. For the winter months baking is a treat as it not only fills the house with beautiful aromas it allows one to incorporate the preserved & fresh produce. Hannah is clearly eager to walk. Take care

    Jessica I look forward to your videos, and it doesn't matter the content. Whether you are canning, freeze drying, cooking, or gardening it is you that we all tune in for. Your amazing drive, inner strength and perpetual grace is an inspiration for all of us. I agree that having all of those tools makes the preservation process easier by far. I got a freeze dryer last year, I am well past my child rearing days, but I love the fact that I can buy in season fruits and vegetables in bulk and freeze dry them for later use, while keeping nearly all of their nutrients. I do freeze dry my celery tops and bag them in quantity for a large pot of stock, it works great. I find that my freeze dryer helps me to keep my grocery budget in check in the winter months. I also freeze dry milk when I find it for $2 or less a gallon. And I buy lots of eggs when they are $1 a dozen and freeze dry those, then when they hit $4-$6 a dozen, I don't have to pay that. I miss having my own chickens, but living in the woods and being older, just isn't worth the predator fight. So we get them fresh from other people.     Honestly everything you already do, I love. I get so much inspiration from you. From the clean eating, the pantry challenge, and the everything counts challenge. My own canning skills have greatly improved because of you.
    I have made some of your recipes, and my husband’s A1C went from a 10 to a 7.8. If I keep cooking like you, he will be able to get off of insulin. That will be one less bill to pay.

    I love watching your videos, i come from a family of 9 children, & your dedication to your family reminds me so much of my Mom. She worked what seemed like around the clock to take care of us.     I completely agree Jessica, freeze dried herbs are incredibly superior to dehydrated, there’s just no comparison. Freeze drying them is worth every cent. I grind mine into a powder and add to salt to make different seasoned salts, give them away as gifts and everyone loves them.

    I love your channel so much!!! I’m in southern Ohio & our growing season is winding down. We just went apple picking & I’m getting ready to make some apple butter & pie filling. I’ll make scrap apple jelly too! Then I’ll make some chili sauce & chili tomatoes with my tomatoes I’ve been storing in the fridge.
    Baking videos would be helpful as well as easy meals for busy moms. Something homemade yet easy to prepare!

    Jessica, what you said about fitting in your projects between schoolwork really spoke to me. I’m in my sixties and have been fighting a bacterial infection off and on for nearly a year. I’m alone and so bringing in even my smaller than usual bounty has been very difficult this year. Everything has to be done in my brief hours of energy, before I give up and return to bed. I ended up bagging some tomato sauce in ziplock sandwich bags, I’m dehydrating a few shelves of yellow tomato halves in the dehydrator for “sun dried” toms in olive oil with some of my garlic harvest from June. I gave up on growing herbs outside this year and moved them into my spare bathroom and put them under the grow lights I use for seed starts and have fresh heaps of herbs! I’m going to try indoor lettuce for the winter this way.
    We have to do what we need to do with the resources we have and currently my most scarce resource is my energy and health. Put it to wise use. God bless!

    You can easily test the pectin content in a fruit juice by mixing 1 tsp of the juice with a tablespoon of rubbing alcohol. If the juice clumps up, there is enough pectin. (But don't taste test the clumped juice because that kind of alcohol is poisonous.) If I want to make jelly with a low pectin fruit, sometimes I'll just add peels and cores from apples to help boost the pectin.

    I just planted a
    transcendence crab apple tree, both for the fruit and they help with pollination of the other apple trees. We lived in Canada 15 years and my favorite was to can crab apple juice. You allow the cooked mixture to sit overnight with cream of tartar. The juice becomes perfectly clear.

    I truly enjoy your videos! No matter what the content, I glean so much knowledge from you. Thank you for sharing so honestly. I just began watching your videos earlier this year during the pantry challenge. This is the first every bit counts challenge that I have watched, and it really changed the way I looked at preserving my harvest. I used to try to tackle it all in a huge canning day while my husband was home to help with the kiddos. And it was getting to be such a struggle. It seemed we always had some other project that him and the boys were working on during that time, my produce wasn't ready on the weekends, or just other plans would derail my big canning plans. I found, with your suggestion, that doing little bits each day was actually much better! It was amazing how just a small shift in my own mindset made all the difference in the world. Thank you! Also, in the video you mentioned possible doing more apple pie filling. I came upon a recipe for Mock Apple Pie filling this year that uses zucchini instead of apples. I was skeptical, but had a ton of zucchini to use. So I gave it a try. My family really enjoyed it! So much that I did a second batch.
    I would love to see how you do soap making or any housekeeping tips/cleaners you use in your home.

    I enjoy watching your canning process and seeing you harvest from your garden. I didn't do so well with my little garden this year, but I thank God for what I've gotten so far and we enjoyed the harvest.
    I love to bake and I'm baking at least once per week, so I'm already excited about the Fall and Winter baking.

    Even though I'm a long time homesteader, I so enjoy the peaceful presence you bring to your videos, and enjoy seeing what you are up to. I would love to see videos on non-dairy cheese making. I've found a cashew based Parmesan I love, but have not found a feta or any others I care for. Thanks for all you do.

    Morning Jessica! I wish you put out a video every morning lol I know that is impossible but every time I watch your video I get so inspired to get up and do! Sometimes I get so stressed with working and trying to get everything preserved but then I watch you and I know I can do it. It's just me.     Really appreciate your channel. Love watching you homeschool. (I homeschooled my children a long time ago. They are 41 and 38 now. Both quite accomplished in their own ways.) Anyway, it brings a smile to my face of such sweet times in my life when I see your family. Thank you for sharing a peek into your life. PS. My oldest is homeschooling and I help in their program for my youngest granddaughter. It is such a blessing to be able to help, especially since I am retired from being a nurse.     Watching you little boys is bittersweet for me. Mine are now 19, 17 and 15 (one 11yo girl). This makes me miss that stage so much. The little guy with the bag on his back is so my kids, or costumes for months just fun little guy stuff. Almost got a tear in my eye, but big guys are fun in different ways and I enjoy that too.

    Here’s a hack I do for an easy meal. I use a crockpot, but given your family size you’ll use the toaster. Pole your potatoes w a fork. Rub some oil on them. Rub salt. Put in roaster to bake. It takes me 4 hours on crockpot. Not sure about larger volume. I do in afternoon. Then we do deluxe potatoes for dinner. Great way to use up leftover chili that’s not enough for a meal or bbq chicken. I also put them in the summer and grill my protein and my side is done. Quick steam/heat a veggie. It also works for baking sweet potatoes. Great in the summer when you don’t want to heat the oven. I know you harvest potatoes but never see you serve baked potatoes. Maybe your family just doesn’t like them? Granted, the cheese, butter and sour cream make them. So I can see with no dairy, they aren’t as good. But w chili or shredded bbq pork or chicken it’s give some moisture. Anyway, just an idea.
    We need a pantry tour! How you store. Summer recap. We love those!

    Last year I made my first crabapple jelly. Ours are small like yours, but I love the floral quality in the jelly, and actually it was my first ever jelly. It was so beautiful.
    I used a piece of muslin in a colander.

    As I was sat watching I was wondering how much it must cost in electric to do all your food preservation and then as if by telepathy you mentioned the running cost of your freeze dryer ❤ watching your children playing together in the sunshine ☀️ was heart warming and brought back memories of my childhood .. you truly have a lovely family a credit to you both .     I especially love how your family worships together. It is so important and will have a lasting impact on your children. It is awesome to see everyone stacking the wood. I use wood also usually about 2 cords. My Mother would put put some kind of small sour apple in her strawberry jam to get it to set, not sure if it was crab apples or not. I got my freeze dryer on Friday and so excited to start using it. You definitely inspired me to get one so I used your link. I want to freeze dry some herbs as well, I think freeze dried taste better than dried. I used my roaster to can my tomatoes into sauce and juice. I also used it for pear butter and apple butter, made it so easy! Your children are growing so fast. Loved seeing the boys playing and Hannah is precious. My daughter walked at 9 months, and hasn't stopped, she's now 30, lol. I am interested in how you can kale, I have never done that. My shoulder issues have slowed me down quite a bit but hopefully the freeze dryer will help me preserve a lot of my garden instead of canning so much. Thanks for sharing your beautiful family and all of the work that you and your husband do to make it FAMILY! ❤

    I have my celery in the HR right now.😀 I think I’m going to try and make celery salt, just using the leaves. I’m not sure it will have enough flavor. We’ll see.😂 Love your videos. -Natalie

    I live in Ohio as well. My garden didn’t produce much of anything this year. We were hit with really bad mold and mildew. Tried fighting it off but, it was very persistent.
    I think it was the odd weather patterns we had this year.
    Hopefully it will be better next year!

    I think my grandma had a crab apple tree here, all the way on the equator!!!!
    I tried the apples once and concluded they were tart and sour because we didn't have the correct weather for apples to grow properly 😂 Never realised it was an entirely different type of apple.

    Hi Jessica, I very rarely comment but I have been watching your videos for a long time now and always learn something, or get inspired to try something new. Watching you and how you utilize every scrap of food has totally changed my mindset with regard to not wasting what I have,... I now get annoyed with myself if something has to be thrown away, but that is happening very rarely now since I started using your ideas of menu planning and putting leftovers or small batches of things in the freezer for future use, so just wanted to say a huge thank you for helping me to be more frugal and be more mindful with everything i grow or buy. I am happy to watch whatever you care to share!

    We went to a friends house a few weeks ago and I discovered their neighbor had a large crabapple tree with tons of tiny apples hanging onto my friends property. So I asked if I could pick some. No one has been collecting apples from this tree for years. They were also the little ones like you have. I picked about half a grocery sack full. I could have gotten alot more! But, that amount turned out to be perfect. I'd never made crabapple jelly, but, couldn't let this opportunity pass me by. It is delicious!

    Growing up we also had crab apple trees. They were like the size of plums or so. Every year my mom would can the whole with some cinnamon and they were so delicious!

    I love to see you cooking. Right now we have no real food allergies but I love to know how to handle them. You also add some different things to meals that I hadn't ever thought of. Love your soups on Sundays with all kings of things in them.

    My husband said the other day that watching your videos gives me baby fever 😂 after watching Hannah and Gracie at the end of the video i think he is right 😂 i would love videos about baking, homeschooling, your favorites read alouds, advices for new/young moms, parenting.

    Looked like lots of fun! I ended up canning applesauce yesterday (got 8 quarts so far, still have more apples to process) and decided to try the apple peel/core jelly. It is so delicious! I added cinnamon to mine and it turned out great! From the peels and cores I was able to get 4.5 pints of jelly and six 1/2 pints of syrup. Look forward to learning more from you!
